I’m fan of cookies because they’re the perfect amount of sweet for me! I don’t need a lot to satisfy my sweet tooth so in 3-4 bites, I’m great! I love to bake them, enjoy and share some, and tuck a few into the freezer for later. All of these cookie recipes freeze great, so they’re right ready to go when you need a little treat. You can also freeze the dough in balls to cook later when you want hot from the oven cookies to enjoy! Yummmm! 🙂

A few helpful tips for baking at higher elevations: 

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

They taste amazing and all things considered… they’re loaded with good for you ingredients like bananas, applesauce, oats, walnuts, and semi-sweet chocolate. You can replace the sugars with Truvia Baking Blend, Brown Sugar Baking Blends, or even honey would work to cut down the sugars a bit, if you’d like to. I replaced half the butter with applesauce, which works well in most baking recipes.
