I’m fan of cookies because they’re the perfect amount of sweet for me! I don’t need a lot to satisfy my sweet tooth so in 3-4 bites, I’m great! I love to bake them, enjoy and share some, and tuck a few into the freezer for later. All of these cookie recipes freeze great, so they’re right ready to go when you need a little treat. You can also freeze the dough in balls to cook later when you want hot from the oven cookies to enjoy! Yummmm! 🙂

I’m totally in love with the Dried Wild Blueberries at Trader Joes… Oh my. Every little one is bursting with the most amazing blueberry flavor! Chiperoo Cookies to celebrate back to school with your kids this year and we will be celebrating lil’ Carter and Charlie’s birthdays! Carter loves cookies (most of the time they’re the healthier kind) and every once in while he gets the treat of traditional-super-delicious-homemade Chiperoo Cookies!
First batch in and they are looking fabulous, if I do say so myself! A test taste confirms that I am right on. Sweet sugar meets earthy pecans that sit sweetly on a shortbread type crust. I seal the deal with my Maple glaze!

Let’s throw it back to when my son, Jake, had to make up a missing assignment in his Home Ec class (now, that is MY kind of homework). It was titled “Watchamacallits” and called for things like 60 Tbsp of flour, 32 Tbsp sugar, etc. He had to convert the mystery recipe and then make it. We discovered them to be a delightful Snickerdoodle Cookie. Best homework ever! 🙂

A few helpful tips for baking at higher elevations:
- If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake.
- Adjustments are needed for 5000+ feet and above:
- Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
- Reduce sugar: for each cup, decrease 2 tablespoons.
- Increase liquid: for each cup, add 2 to 4 tablespoons.
- Increase oven temperature by 25 degrees F.
- Check if it is done a little early.
- This takes some trial and error to get it right for you.

Hold onto your britches… these 3 Ingredient Peanut Butter Cookies are gonna knock your socks right off!! Mmmmm Hmmmm. Soooo simple to make and they taste like the real deal! I know I was skeptical when I first heard about them too but I’m telling you, you will totally LOVE everything about them.
Chocolate Chunk Banana Nut Cookies Recipe are they perfect way to use up those overripe bananas! YUMMY. They taste amazing and all things considered… they’re loaded with good for you ingredients like bananas, applesauce, oats, walnuts, and semi-sweet chocolate. You can replace the sugars with Truvia Baking Blend, Brown Sugar Baking Blends, or even honey would work to cut down the sugars a bit, if you’d like to. I replaced half the butter with applesauce, which works well in most baking recipes.
These cookies turned out moist and chewy and had the perfect amount of sweetness to them. If you’re okay with dairy, then I would highly recommend adding the chocolate chips! My kids were eating these for breakfast in the morning. Fruit, honey and oats – sounds pretty healthy to me!
