Ingredients in Chicken Fiesta Kale Salad Recipe

  • Kale- contains fiber, antioxidants, calcium, vitamins C and K, iron, and a wide range of other nutrients that can help prevent various health problems.
  • Red Onion- is full of sulfur compounds that protect the body from ulcers and various cancers. They can also fight bacteria in the urinary tract. The most important of these compounds is called quercetin – an antioxidant compound that could provide protection against cancer, heart disease and allergies.
  • Tomatoes- antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
  • Sweet Corn- Because of the high fiber content, it can aid with digestion. Corn also provides our bodies with essential minerals such as zinc, magnesium, copper, iron and manganese. Corn is a good source of the antioxidants carotenoids, lutein and zeaxanthin, which promote eye health.
  • Black corn- provides powerful anti-inflammatory properties, supports cardiovascular health, aids in weight management through high fiber, and is a rich source of iron, phosphorus, and vitamin A.
  • Jalapeños- are rich in vitamins A and C and potassium. They also have carotene — an antioxidant that may help fight damage to your cells – as well as folate, vitamin K, and B vitamins. Many of their health benefits come from a compound called capsaicin. That’s what makes the peppers spicy.
  • Cilantro- is a fragrant, antioxidant-rich herb that has many culinary uses and health benefits. It may help lower your blood sugar, fight infections, and promote heart, brain, skin, and digestive health. You can easily add coriander seeds or leaves — sometimes known as cilantro — to your diet.
  • Chicken- has a very high protein content, which plays a very important role in sustaining our muscles. Rich in calcium and phosphorous for healthy bones. Stress reliever with tryptophane and vitamin B5. Immunity booster too!
  • Queso fresco- is a nutritious, mild, and crumbly Mexican cheese providing a high-quality, easily digestible source of protein (approx. 8g per ounce) and calcium. It is beneficial for bone health, muscle repair, and maintaining stable blood sugar levels.

  • 1/4 cup petite tomatoes, halved

I love having Miss Nichole from Pure Clean Fitness come hang out with us.  It’s awesome to have her visit and inspire our fitness!  

Nichole’s Tips on Water: 

Summer is coming, that means the temps are rising. If you are me your whole body is singing hallelujah!!! With the change in seasons comes the same old lecture….drink water! This is a subject that needs to be revisited on a regular basis, mostly because people can’t seem to figure it out.

 
Let’s start simple…are you getting enough water? The easiest way to answer this is to notice the color of your urine. But you can also figure it out by getting to know your body. I know that if I have a headache the first thing I need to do is drink some water, 90% of the time this cures it. Another way I can tell if I am not getting enough water, my weight sneaks up a few pounds. I know it sounds weird, but it’s true. My body holds on to everything if I am not getting enough water. 
 
Good Reasons You Need Water:
1) Relieves fatigue and increases energy
2) Promotes weight loss
3) Helps your body get rid of toxins
4) Improves skin
5) Promotes GI regularity
6) Relieves headaches
7) Boosts immune system
8) Prevents cramps
 
One of the easiest and best recommendations I have heard is to get half your body weight in ounces each day. That means if you weight 150lbs you need to drink 75oz of water. As an individual you need to decide if that works for you. Don’t decide after one day of frequent potty stops. Your body will get used to it. 
 
Getting enough water comes back to the magic word…PREPARE. If you have a bottle of water with you it is easier to drink. I know some people like to have all their water ready for the day, that way it is easy to know if you have gotten it all in at the end of the day.
