I love it when blueberries are in season. Plump and sweet blueberries taste sooooo good… not to mention so good for you!
Ingredients in Blueberry & Almond Chicken Salad Recipe
- mixed salad greens
- fresh blueberries
- sliced almonds
- shredded parmesan
- grilled chicken breasts, sliced (marinade with Herb Marinade for Everything)
Honey Lemon Vinaigrette:
- zest of 1 lemon
- lemons
- honey
- olive oil
- sea salt
We grilled our chicken with the Herb Marinade for Everything that I shared not too long ago… it really is amazing on everything!

How to make Blueberry & Almond Chicken Salad Recipe
- Divide salad greens between 4 serving plates.
- Top with remaining ingredients.
Honey Lemon Vinaigrette:
- Combine first 3 ingredients in blender, blend until combined.
- Carefully with blender running, slowly drizzle in olive oil, once incorporated add salt.
- Serve with your favorite salad.

This is ONE of those recipes, that it comes into my email box (morning), and I make it SAME DAY (lunch!) had some rotisserie chicken on hand, toasted up some almond slices, made the dressing, and WAH LA! It was fabulous! The only thing I did different was to double the olive oil. Thanks for a healthy and delicious salad!
