Chicken Salad Croissant pretty much sums up summer in a sandwich- don’t you agree?!
Oh my goodness… every scrumptious little bit is heavenly 🙂
- 2 1/2 cups cooked chicken, diced
- 2/3 cup light mayo
- 2 Tbsp lemon juice
- 1 tsp salt
- 1 tsp curry powder
- 1 cup diced celery
- 1/4 cup slivered blanched almonds
- 1 cup seedless grapes
- 8 pieces ruffle lettuce
- Mix and chill.
- Serve on croissants with ruffle lettuce.

Chicken Salad Croissant is fabulous for a summer picnic or any get together, actually.
Just make sure to keep it nice and cold so it stays fresh and yummy good 🙂
