A few years ago I attended a Thai cooking class and learned how to make the most delicious coconut and mango sweet rice for dessert. The dessert is classically made with “sticky rice”, which is Thai Sweet Rice and can be found in Asian food stores.

  • Jasmine Rice
  • mango
  • coconut milk
  • water
  • white sugar
  • sea salt

How to make Coconut Mango Sweet Rice Recipe

To get the “sticky” consistency you soak the rice in water for at least 30 minutes or up to 4 hours. It’s then steamed in a cone shape rice basket and sweetened up with coconut milk, sugar and fresh mango.

So, with neither time nor basket tools on my side, I improvised the dish a bit by using the Jasmine rice.

  • In a colander rinse rice until water runs clear.
  • In a large saucepan, combine rice, coconut milk, salt and water over medium heat and bring to a boil.
  • Reduce heat to the lowest level, cover and let cook undisturbed for 30 minutes. Turn off heat and let sit undisturbed another 30 minutes.
  • Add sugar to mixture and stir to combine well.
  • Add diced mango and serve.

 The first day of school has been thoroughly celebrated at my house! No rushing to get home to kids hoping there is no blood shed, no 2nd breakfasts or 3rd lunches, limited time for sassy comebacks and eye rolls. Yes, school is back in. 

Included in the celebration is being able to get in a whole workout without a single text or phone call asking me how much longer til I get home.

I have gotten pretty good at the 30 minute lift, but you know what is missing from that….stretching. I am sure most of you knew that because it is the same thing that so many adults skip out on claiming “there just isn’t time.”

This week I am focusing on warm up (dynamic) stretches, we will hit cool down stretches another time. For warm up stretches I like to move and get all the joints and muscles engaged, this is called dynamic stretching.
Dynamic stretches;  active movements where joints and muscles go through a full range of motion. They can be used to help warm up your body before exercising.Dynamic stretches can be functional and mimic the movement of the activity or sport you’re about to perform. For example, a swimmer may circle their arms before getting into the water.
Dynamic stretches can also be a series of movements to get the body moving. Some examples include trunk twists, walking lunges, or leg swings against a wall.
This week we are going to go through some of my favorite dynamic stretches. If you can pick a space that allows for about 20 steps that is great, but you can also do this in place.

Total Time 1 hour 15 minutes

Ingredients

  • 1 cup Jasmine Rice
  • 1 ripe mango, peeled and diced
  • 1 (13 1/2 ounce) can coconut milk
  • 1/3 cup water
  • 1 cup white sugar
  • 1/4 teaspoon sea salt

Instructions

  1. In a colander rinse rice until water runs clear.
  2. In a large saucepan, combine rice, coconut milk, salt and water over medium heat and bring to a boil.
  3. Reduce heat to the lowest level, cover and let cook undisturbed for 30 minutes. Turn off heat and let sit undisturbed another 30 minutes.
  4. Add sugar to mixture and stir to combine well.
  5. Add diced mango and serve.
