Southwest Beef & Polenta Rounds Recipe is a savory appetizer for your next gathering! When I’m having friends and family over for dinner, I like to have a variety of two-bite appetizers ready for them to enjoy as everyone arrives. Southwest Beef & Polenta Rounds Recipe is a flavorful new recipe creation. I love to combine flavors and textures– like petite beef patties with a southwest spice, pan-fried polenta rounds, queso fresco cheese, and then finished off with the choice of two kinds of salsa! Our whole family approved as we enjoyed eating these southwest beef and polenta appetizers together a few weeks ago. They’re a deliciously tasty masterpiece!

How to make our Southwest Beef & Polenta Rounds Recipe

  1. Heat olive oil in large skillet over medium high heat, lightly sea salt and cook polenta rounds 2 minutes each side or until lightly crispy and warmed.
  2. Remove to holding plate until serving.
  3. In a large mixing bowl combine Laura Lean Organic Ground Beef, egg, panko crumbs, and spices; knead with hands and form 1 inch patties.
  4. Cook in same skillet 3-4 minutes per side or until desired doneness is achieved.
  5. To Plate: Place one slider patty on each polenta round, top with queso fresco cheese, and garnish with cilantro leaf.
  6. To Serve: use salsa varieties of choice, crumbled queso fresco, and cilantro.

Fit Friday!

We are getting down to the wire folks. Are your stockings hung with care? Are your presents wrapped with beautiful bows? Are all of your lights sparkling well into the night? While my lights are sparkling I have yet to wrap a single present and still have a stack of envelopes to get addressed and in the mail. Don’t worry, I am still breathing and I know that all will be ok.

Part of keeping my calm includes me getting my workouts in. I have found that when I am too busy to sneak in even a short workout I tend to get even more chaotic in my brain. Getting my heart rate up helps me to stay focused and energized the rest of the day. So today we are back to workouts for our Fit Friday. Grab a friend, a some water, and let’s get to work with this HIIT workout on this last Friday before Christmas.

Push-ups are one of my favorite movements, not because they are easy for me, they definitely are not easy, but because I know they are so good for me. Push-ups are a great upper body and core strengthener that I can do anywhere. Watch your form!

Southwest Beef & Polenta Rounds Recipe a savory appetizer for your next gathering!

Ingredients

  • 1 pound Organic Ground Beef
  • 1 egg
  • 1/3 cup panko crumbs
  • 2 teaspoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 (12 ounce) ready to serve polenta tube, sliced into 1/4 inch
  • 1 cup queso fresco cheese, crumbled
  • 1 cup medium tomato salsa
  • 1 cup tomatillo salsa
  • 1/4 cup cilantro leaves, to garnish

Instructions
