Southwest Orzo Pasta

We, sadly, had to pull the garden out last weekend. (sniff, sniff)  I love all that fresh produce and the supplementation to my grocery bill!  Before our first hard frost I picked all the tomatoes, peppers, basil, mint, melons, etc that I could… made our last batch of Tomato Basil Soup (which we LOVE) for the season, two nights ago. (That’s the Tomato Shamato recipe from Aug 18, 2011)  So, here’s farewell to another years garden! There’s a time and season, right?
 

This Southwest Orzo Pasta recipe is a light meal all in it’s self, I serve it with whole grain Tortilla Chips.  I got this recipe from a friend and neighbor where I once lived… I have been fortunate to live A LOT of places.  I’ve received and shared lots of recipes along my way.  I love it when I use some of my old friends recipes… I get to share a bit of my day with them, remember them and all the good times we had!  I’ve been blessed to know and learn from and love so many different people over the years.  Thanks to everyone of them for touching my life in so many different ways.  I love you all : )

Southwest Orzo Pasta is a little Tex-Mex mixed with some pasta and the combo is refreshingly delicious!!  You’ll completely love this Southwest Orzo Pasta recipe it’s a wonderful blend of black beans, sweet corn, lime, and cilantro…

Southwest Orzo Pasta
Southwest Orzo Pasta with Multi-grain Tortilla Chips

Southwest Orzo Pasta

2/3 C dried orzo pasta
1 can black beans, rinsed and drained
1 1/2 C corns kernels, thawed or drained
2 ripe tomatoes, chopped
1/3 C cilantro
1/4 C chopped green onion (or finely chopped onion)
1 tsp grated lime peel
1/3 C lime juice
salt and pepper as desired

Cook orzo according to directions.  In a large bowl, add pasta, beans, corn, tomato, cilantro, onions, lime peel, salt and pepper.  Add in cooked orzo.

Mound pasta on dinner plates. Serve with tortilla chips.

Southwest Orzo Pasta ....

South Orzo

Ingredients

  • 2/3 cup dried orzo pasta
  • 1 can black beans, rinsed and drained
  • 1 1/2 cups corns kernels, thawed or drained
  • 2 ripe tomatoes, chopped

  • 1 teaspoon grated lime peel
  • 1/3 cup lime juice
  • salt and pepper as desired

Instructions
