This Southwest Orzo Pasta recipe is a light meal all in it’s self, I serve it with whole grain Tortilla Chips. I got this recipe from a friend and neighbor where I once lived… I have been fortunate to live A LOT of places. I’ve received and shared lots of recipes along my way. I love it when I use some of my old friends recipes… I get to share a bit of my day with them, remember them and all the good times we had! Southwest Orzo Pasta is a little Tex-Mex mixed with some pasta and the combo is refreshingly delicious!! You’ll completely love this Southwest Orzo Pasta recipe it’s a wonderful blend of black beans, sweet corn, lime, and cilantro…
|Southwest Orzo Pasta with Multi-grain Tortilla Chips|
Southwest Orzo Pasta
2/3 C dried orzo pasta
1 can black beans, rinsed and drained
1 1/2 C corns kernels, thawed or drained
2 ripe tomatoes, chopped
1/3 C cilantro
1/4 C chopped green onion (or finely chopped onion)
1 tsp grated lime peel
1/3 C lime juice
salt and pepper as desired
Cook orzo according to directions. In a large bowl, add pasta, beans, corn, tomato, cilantro, onions, lime peel, salt and pepper. Add in cooked orzo.
Mound pasta on dinner plates. Serve with tortilla chips.
