Why we love Coconut Oatmeal Cookies Recipe

Who doesn’t love a good ole’ homemade oatmeal cookie? Today we’re taking ours up a notch by adding shredded coconut and let me tell ya they’re AH-mazing!! I made this recipe using Truvia however feel free to substitute traditional sweeteners if preferred.

How to make Coconut Oatmeal Cookies Recipe

  • Preheat oven 375 degrees.
  • Coat cookie sheet with cooking spray; set aside.
  • In a separate mixing bowl sift flour, sea salt, baking powder, and baking soda; set aside.
  • In a mixer with the paddle attachment cream butter and coconut oil until smooth.
  • Add truvia brown sugar blend; mix well.
  • Add granulated sugar or truvia baking blend and cream for 2-3 minutes until light and fluffy.
  • Add eggs one at a time; mixing well and scraping down bowl with each addition.
  • Add water and vanilla; mix.
  • Add flour mixture all at once and mix to 80% incorporated.
  • Add oats and coconut; mix just until combined.
  • Use a large cookie scoop or drop by tablespoonfuls onto prepared cookie sheet.
  • Bake 9 minutes, remove and allow cookies to rest for 1 minute on sheet before moving to cooling rack.
  • Cookies will not look done- only lightly browned on edges.

Helpful baking tips for higher elevations

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup coconut oil, solid form
  • 1 cup truvia brown sugar blend
