Pineapple Coconut Chia Overnight Oats is one of my very favorite healthy breakfasts~ oats, pineapple, coconut, almonds, and my new favorite Truvía® Nectar!

It’s a blend of stevia leaf extract and honey, Truvía® Nectar has 50% fewer calories per serving than sugar and adds a touch of sweetness wherever you would use agave, sugar or honey. Because Truvía® Nectar is twice as sweet as honey, you only need to use half as much.
Pineapple Coconut Chia Overnight Oats is jam-packed with all kinds of fabulous nutricious ingredients… oats, yogurt, oranges, apple, apricots, almonds, chia seeds, and on and on!! I LOVE this stuff. It keeps great in the fridge for a few days, so if you have leftovers just enjoy your them for a healthy snack or breakfast in 2-3 days.
Pineapple Coconut Overnight Oats
Ingredients
- 1 1/2 cups fat free plain yogurt
- 1 1/2 cup low-fat milk
- 3 tablspoons Truvía® Nectar
- 1 cup orange juice
- 2 cups whole oats
- 1/4 cup chia seeds
- 3/4 cup sliced almonds
- 1/2 cup sweetened shredded coconut
- 1/2 cup cranberry raisins
- 1/2 cup apricots, snipped
- 1 opal apples, shredded
- 1 orange, cut into 1/4 inch pieces
- zest of orange
- 2 cups fresh pineapple chunks
Instructions
- Combine all ingredients in large bowl.
- Stir to combine.
- Cover and refriderate overnight.
- Serve with fresh pineapple and additional coconut.
- Enjoy!
