Our Mediterranean Spinach Salad Recipe is a colorful salad that’s large enough to feed a crowd! You know, it’s been said that we first eat with our eyes… which activates our tastes buds and then all the magic of a meal begins. I quite love vegetables… each with their individual colors, textures, and flavors that makes them unique. When they are brought together in this appetizing salad, it’s purely magical.
I have no idea why this salad is called Campaign Party Salad. I searched on Google to see the origin of this recipe, but didn’t come up with anything. I decided that this dish has all the hallmarks of a great holiday dish. There is something festive about a creamy jello salad filled with fruit and nuts.
Apple Cucumber Tossed Salad is a simple yet delicious side that can be ready in minutes! If it were me, I’d first make it to compliment the main dish at dinner and then eat the leftovers the next day for lunch!

Cadbury Egg Cookie Pizzooki is a warm cookie made with lots of chocolate and topped with ice cream plus caramel drizzle to make it even more delicious! Greek Lemon Yogurt Cake is a wonderfully moist cake called Yaourtopita in Greece and it tastes even better the day after it’s made! Although most Greek meals end with sun-ripened fresh or dried fruit they do have a sweet tooth too! Buttery-rich pastries filled with nuts, melt-in-your-mouth butter cookies, and moist cakes abound. Fit Friday with Miss Nichole
I have the opportunity to lead a fantastic group of ladies through a bootcamp class that I teach twice a week at our local rec center. Most of these women have been attending my class for years, they have been with me through babies and cancer and I have watched their lives develop as well over the years. Each month we have various challenges, we opted to continue with these challenges during this time.
I wanted to share our April challenge with you all and encourage you to make your own challenges/goals. These aren’t hard things, the desired outcome is not to have more things added to our plates or to pile on stress. The desire is that we as moms remember to take care of ourselves during this trying time.
April’s goals are centered around finding a healthy balance through all of this.
The fitness section doesn’t have to be anything to crazy or intense. If you are feeling it and need a hard push, go for it. If you are feeling the need to play with your kids and get them involved in a bike ride or a push up challenge, go for it. If you need to head out on a nice easy family walk and feel the sunshine on your face, go for it. The point is to find what you need and honor it.
Good luck! Love and prayers for all of you!
