Why we love Zuppa Tuscana Soup Recipe

I love soup! It just warms me right up and makes me feel all snuggly inside–isn’t it the best on a cold evening! Olive Garden soups are one of the best things they serve.

I decided to figure out how to make this one at home–we hope you love it too!

How to make Zuppa Tuscana Soup Recipe

  • Sauté Italian turkey sausage and crushed red pepper.
  • Drain excess fat; set sausage aside.
  • In the same pan, sauté bacon, onions, and garlic for approximately 10 minutes or until onions are soft.
  • Mix together the chicken bouillon and water in a large soup pot, then add onions, bacon, and garlic–Bring to boil.
  • Add potatoes and cook until soft, about half an hour.
  • Add heavy cream and cook until thoroughly heated.
  • Stir in cooked sausage.
  • Add kale just before serving.

There are so many different styles of workouts, different ways to format your workouts. Is there a perfect answer for everyone? NOPE! Although we would all love a one size fits all workout the reality is that doesn’t exist.

My number one answer to workout questions is “However you can get it done.” Any way you choose to workout it is better than sitting on the couch. I have learned that there are some personalities that simply won’t do things they don’t like. 

If this is a highly focused individual and they can honestly say that they will get done whatever needs to get done we will then move to goals. Endurance athletes tend to have the majority of their workouts with high reps and lower weight (15-20 reps at 50-60 percent of your 1RM) and body builders or strength athletes will focus on lower reps and higher weight (8-12 reps of 65-75 percent of their 1RM). 

Am I telling you all of this to confuse you? No, I promise. A lot of the Fit Friday workouts are focused on endurance style, but it is important to also focus on your strength sometimes.

I really prefer to mix it up a bit for my chaotic brain. This week we are focusing on a strength workout and I will start to add more of these into the mix. Focus on solid movements. Pick a weight that is challenging yet doable.

Ingredients

  • 1 pound ground Italian turkey sausage
  • 1/2 to 1 teaspoon crushed red pepper (depending on how hot you want it)
  • 1 large white onion, diced
  • 4 tablespoons diced bacon, or turkey bacon is a healthier option
  • 2 teaspoons garlic, minced
  • 10 cup water
  • 5 cubes of chicken bouillon
  • 1 cup heavy cream or half and half
  • 1 pound Russet potatoes, approx 3-4 large potatoes
  • 1 bunch of kale
