Salmon Street Tacos Recipe

Our Salmon Street Tacos Recipe are sure to bring smiles to your dinner table! I am a huge fan of fish tacos especially in toasty tortillas with rice or shredded green cabbage!  This salmon is the perfectly flakey and hot off the grill and topped with a variety of fresh from the garden vegetables. If you are looking for the secret sauce fish taco sauce then there’s no need to look any further– we’ve got that too!

As more of my clients have moved from the gym to the great outdoors lately I have been getting asked a lot about endurance, more specifically on how to build endurance. When you go from short bursts in the gym, or workouts where rests are built into the workout, to longer continuous efforts you find yourself questioning your fitness and abilities. So how do we move into those longer runs, swims, or cycling workouts with a smile?

 
 
 
 
 
 
1) Slowly and with patience! You have to take small steps in building your endurance. 
2) Consistency. Sticking with it on a consistent bases is the only way to get there.
3) Mix in speed and interval workouts throughout the training cycle while also focusing on those weekly long and slow workouts.
4) Nutrition! I have watched many gym rats transition into running lately. The head out the door empty handed and with high hopes. Water is a must and if you are heading out for more than 45 minutes you are going to need something more. The something more is up to you, play with it and figure out what you like. It may be protein power bites or swedish fish or you may prefer to drink your fuel, whatever it may be figure it.
5) Environment. Heading out for a 30 minute workout in the sun and heat and very different than a two hour workout. Plan accordingly.
6) Patience! I know I mentioned this one first, but it is vital and deserves another reminder.

Our Salmon Street Tacos Recipe are sure to bring smiles to your dinner table!

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 8-10 mini corn tortillas
  • 2-3 salmon filets, grilled with fresh lime
  • 2 cups shredded green cabbage, shredded or brown rice
  • 2 sprigs of cilantro per taco (if you’re a cilantro lover)
  • pico de gallo or any salsa
  • 1/2 cup crumbled cojita cheese
  • The Sauce:
  • 1/2 cup olive oil mayonnaise
  • 1/2 cup lowfat sourcream
  • 1/2 bunch of cilantro, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne
  • 1 tablespoon lime juice
  • salt and pepper to taste
  • variety garden fresh vegetables, if desired

Instructions

  1. Coat grill with cooking spray and pre-heat on medium heat.
  2. Coat filets with olive oil cooking spray on both sides.
  3. Grill filets on 3-4 minutes per side.
  4. Heat lime halves on the grill and squeeze fresh lime on filets while grilling.
  5. Salmon is done when pulls away flaky in the middle.
  6. Warm tortillas on the grill or stove top, layer in toppings, top with sauce.
  7. The Sauce:
  8. Combine ingredients in a small mixing bowl. Serve on Fish Tacos
