I feel like this summer has completely flown by. . . how is it back to school time already? Holy Moly. This Papaya Pineapple Coleslaw has got to made before the summer completely winds down.
I spent the weekend in a small town in Idaho to watch the eclipse that went across America on Monday morning! It was so amazing… SO amazing! I’m so grateful I was able to go. Then to make it even sweeter my oldest daughter and her husband gave birth to happy and healthy baby boy Monday evening! Wow. An eclipse baby, talk about magical!
Papaya Pineapple Coleslaw is just the tastiest with fresh papaya, pineapple, red onion, green peppers, cilantro, and finely shredded green cabbage!
SOoooo, so, so good! Enjoy some this weekend with your end of the summer BBQ’s!
There’s nothing quite like a fabulously fresh summer salads and if you like we do, then you may also enjoy our Fresh Fruit, Feta, and Mint Salad, Cucumber Tomato Basil Salad, and Stacked Caprese Salad too! Oh and I ate our Papaya Pineapple Coleslaw on a turkey sandwich and it was super good that way too!

- 1½ cups shredded green cabbage
- ⅓ cup papaya, peeled and diced
- ½ cup fresh pineapple, diced
- ¼ cup red onion, diced
- 1 tablespoon jalepeno, seeded and minced
- 2 tablespoons white wine vinegar
- 2 teaspoons minced cilantro
- ½ teaspoon lime zest
- 1 teaspoon lime juice
- 1½ teaspoon sea salt
- ½ teaspoon pepper
- In small mixing bowl combine all ingredients; toss to combine.
