  • heavy whipping cream

Fit Friday with Nichole

This week I am coming up on my Chemo-versary! Four years ago (2019) I had my last round of chemo, there was no more cancer in my body and I celebrate every year by climbing to a peak.

I climb to the top of the world and fill my heart with love and gratitude celebrating that I get to be on top of the world!

So for this week’s Fit Friday workout I am talking hiking, specifically strength training for hikers.

The energy you feel after being able to say “I hiked that!” as you look around at the beauty all around you is surreal and something that fuels my fire in this life. 

For this workout you will need kettlebells (if kettlebells are not available modify with dumbbells), a bench or box, and a bar to hang from (or modify with leg drops). Wrap it all up with incline walking or some time on the stair machine.

Banana Bread French Toast with Maple Cream Recipe

Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 8 slices banana bread
  • 2 eggs
  • 1/4 cup half and half
  • 1 teaspoon vanilla
  • Candied walnuts, banana slices, and pure maple syrup for serving
  • Maple Cream:
  • 3/4 cup heavy whipping cream
  • 2 tablespoons pure maple syrup

Instructions

  1. Coat skillet with cooking spray, warm over medium heat.
  2. In a small mixing bowl combine eggs, half and half, and vanilla; whisk until incorporated.
  3. Dip each side of banana bread slices and place on hot skillet.
  4. Cook 2 minutes, flip, cook 2 minutes or until golden brown on each side.
  5. Arrange on serving plates with banana slices, candied walnuts, and maple cream.
  6. Serve with additional maple syrup.
  7. Enjoy your Banana Bread French Toast with Maple Cream Recipe!
