Ingredients in our Mediterranean Meat Sauce & Pasta Recipe
- Tomatoes- antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
- Peppers- Red, Orange, and Yellow Bell Peppers are full of great health benefits—they’re packed with vitamins and low in calories! They are an excellent source of vitamin A, vitamin C, and potassium. Bell Peppers also contain a healthy dose of fiber, folate, and iron.
- Olive Oil- is widely recognized as one of the world’s healthiest oils. In fact, people tend to live longer and healthier lives in regions where olive oil is a staple part. It is rich in healthy monounsaturated fats, contains large amounts of antioxidants, strong anti-inflammatory properties, may help prevent strokes, protective against heart disease.
- 90% Ground Beef- Ground beef is a good source of protein, providing 24 grams per serving. Beef is a great source of carnitine, zinc, selenium, iron, and B vitamins.
- Onions- Onions not only provide flavor, they also provide important nutrients and health-promoting phytochemicals. High in vitamin C, onions are a good source of dietary fiber, and folic acid. They also contain calcium, iron, and have a high protein quality (ratio of mg amino acid/gram protein).
- Garlic- Garlic fights all types of infections—fungal, bacterial, parasitic, and viral—
regulates blood sugar, lowers blood pressure, and lowers cholesterol, used widely as a flavoring in cooking, but it has also been used as a medicine throughout ancient and modern history. - Oregano- leaves of the oregano plant have antispasmodic, antiseptic, carminative, diaphoretic, increase bile secretion, expectorant and stimulant. Oregano has been found to have antibacterial, antifungal and antiseptic activities.
- Parsley- Parsley is a versatile herb that provides a concentrated source of nutrients. It’s particularly rich in vitamins A, C, and K. The vitamins and beneficial plant compounds in parsley may improve bone health, protect against chronic diseases, and provide antioxidant benefits.
- Red Wine- Research suggests that drinking an occasional glass of red wine is good for you. It provides antioxidants, may promote longevity, and can help protect against heart disease and harmful inflammation, among other benefits. Interestingly, red wine likely has higher levels of antioxidants than white wine.
How to make Mediterranean Meat Sauce & Pasta Recipe
- In a large mixing bowl; shred tomatoes and reserve with juices.
- In a large skillet over medium high heat oil and sauté onions, stirring for 2-3 minutes until caramelized.
- Add 2-3 tablespoons red wine, add garlic and sauté 1 minute.
- Add ground beef and cook 5-6 minutes or until meat is cooked through.
- Add remaining red wine, tomatoes, peppers, and spices; cook 30 minutes or until liquids are almost gone and meat sauce is thick.
- Serve over cooked pasta and garnish with feta cheese crumbles.

I am taking a break this week from number three on our list for being physically healthy, we will hit that next week. Today we are hitting the gym….with a smile! The sun is shining, spring break is coming and summer will be following on it’s heals. When the sun starts shining and the warm starts spreading I get more excited about working out. I just have more energy and the winter blahs dissipate, thank goodness. The kids all appreciate a momma with a happy energy versus a cranky tired stuck-in-rut momma.
Happy energy makes me feel like a kid. And feeling like a kid makes we want to do some fun kid things. For me that means jump roping. I use to spend hours jump roping when I was a kid and it was fun. This week we are going to embrace our inner child and pick up our jump ropes. Don’t be scared of it, just do it.
On that note, just like every other muscle in your body you can train you pelvic floor. It may never be like it was when you were 20, but will any of your body ever be? Get to those kegels and other pelvic floor strengthening exercises. It will be worth it! Even if you never want to jump rope, it would be nice to sneeze with a little less fear.
So this week we are taking that energy and using it in the gym. Get our your jump ropes and a set of dumbbells, and diapers for a few of you mommas, and let’s get to it!

Mediterranean Meat Sauce & Pasta Recipe is a traditional red sauce made from scratch using fresh tomatoes!
Ingredients
- 1 large onion, small diced
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 red pepper, small diced
- 1 green pepper, small diced
- 8 vine ripe tomatoes
- 1 cup red wine, divided
- 2 teaspoons dried oregano
- 1/2 teaspoon cinnamon
- 1/8 teaspoon all spice
- 2 teaspoons dried oregano, divided
- 1-2 tablespoons fresh parsley, chopped
- 6 servings pasta noodles, prepared to package directions
- topping: 1 (16 ounces) Greek feta cheese and parsley
- OPTIONAL:
- * Replace fresh tomatoes with 2 (28 ounce) cans chopped tomatoes
- * Omit ground beef and double the fresh vegetables for vegetarian red sauce
