As you all know Madeliene and Spencer welcomed their second boy into the family a few weeks ago. We’re so happy to have little Charlie join our crew! Miss Kenzie and I were on-hand to help out around the house while everyone got rest and adjusted to the newest addition.
Our Mediterranean Lasagna Recipe was a delicious, nutritious, and comfy-cozy dinner for the whole family. Even little Carter was a fan! 🙂
Ingredients in Mediterranean Lasagna Recipe
- Ground Beef
- oven ready lasagna noodles
- onion
- jar puttanesca pasta sauce or spicy marinara
- fresh spinach leaves
- 8 vine ripe tomatoes
- Greek feta cheese
- ricotta cheese
- dried oregano
- fresh parsley
Healthy Benefits in Mediterranean Lasagna Recipe
• 90% Ground Beef- Ground beef is a good source of protein, providing 24 grams per serving. Beef is a great source of carnitine, zinc, selenium, iron, and B vitamins.
• Whole Grain Pasta: Whole-grain pasta is typically high in fiber, manganese, selenium, copper and phosphorus, while refined, enriched pasta tends to be higher in iron and B vitamins. Whole-grain pasta is also lower in calories and higher in fiber and certain micronutrients than refined pasta.
• Greek Feta Cheese- Feta is a brined, white cheese with a soft and creamy texture. Compared to other cheeses, it’s low in calories and fat. How to make Mediterranean Lasagna Recipe
Our Mediterranean Lasagna Recipe is simple to make:
- In a large skillet brown Laura’s Lean 92% Ground Beef with onion; drain.
- Add jar of puttanesca pasta sauce or spicy marinara sauce to meat; stir to combine.
- In a small mixing bowl combine ricotta cheese and 1 1/2 tablespoons oregano.
- To make lasagna: layer pasta, meat sauce, 8 tablespoons ricotta cheese (spread with spoon), 1/3 cup greek feta cheese, 2 cups spinach, and repeat layering slices of tomatoes in the middle and top layers of lasagna.
- Top with remaining oregano and ricotta cheese mixture.
- Bake and Serve!

Mediterranean Lasagna Recipe
Mediterranean Lasagna Recipe brings healthy and delicious to your dinner table! The whole family will love it!!
Ingredients
- 1 pound Laura's Lean 92% Ground Beef
- 10 oven ready lasagna noodles
- 1 medium onion, small diced
- 1 (16 ounce) puttanesca pasta sauce or spicy marinara
- 5 cups fresh spinach leaves
- 8 vine ripe tomatoes, sliced 1/4 inch thick rounds
- 1 (16 ounces) Greek feta cheese
- 1 (32 ounce) ricotta cheese
- 2 tablespoons dried oregano, divided
- 1-2 tablespoons fresh parsley, chopped
- 1/3 cup water
Instructions
- Preheat oven to 375 degrees F.
- Coat 9x13 glass baking dish with cooking spray; set aside.
- In a large skillet brown Laura's Lean 92% Ground Beef with onion; drain.
- Add jar of puttanesca pasta sauce to meat and stir to combine.
- In a small mixing bowl combine ricotta cheese and 1 1/2 tablespoons oregano.
- To make lasagna with three layers: place one layer pasta (3 sheets lasagna) in bottom of baking dish, thin layer of meat sauce (approximately 1 cup per layer), 8 tablespoons ricotta cheese (spread with spoon), 1/3 cup greek feta cheese, 2 cups spinach, and repeat two more times. Placing a layer of sliced tomatoes in the middle and on the top layers of lasagna.
- Top with remaining oregano and ricotta cheese mixture.
- Drizzle water around the outside edge of pan, cover with foil, and bake for 35-40 minutes or until center pierces easily with fork.
- To serve: sprinkle with parsley and Greek feta cheese.

Is there a different type of cheese that can be used? Feta is too salty for me to use
Hi Karen– yes, French feta is less salty however a bit softer in texture. Queso freso has a crumbly texture without the salty flavor so that maybe the best choice. Ricotta cheese would also be an alternative. I would use any of these options and it would turn out delightful! Enjoy. xoxo~Ruthie
I’m hoping the lasagna will be awesome but I’m sorry to say that I find the recipe itself to be sparsely written. I printed out the recipe and didn’t have the photos in front of me, so it would have been very helpful to know that I was constructing 3 layers and to be instructed to spread the meat layer very thin. I spread the meat layer thin but not thin enough. I only have two layers and none left over for the top. Argh.
It also would help to specify Oven-Ready for those of us who make a shopping list from the recipe. I only found out reading the comments. No big deal but any bit of information help when new to a recipe.

I sure did!! Since I had a lot of ricotta cheese left, it was the top layer. The flavors are SO good!! Has anyone tried it without meat? I wonder how much the flavor would change. I’m now a Cooking with Ruthie convert!

Oh no! I’m so very sorry for our typo. There was pasta in the instructions, but not in the ingredients part. I have fixed it to have noodles in the ingredients as well. So so sorry about our mistake.

Hi… I prefer to use the oven ready lasagna noodles so it saves a step. You would like to use the traditional noodle and boil it first then that works too! Either way you will LOVE this recipe!! Let us know how much you enjoy it too. We hope you have a wonderful day 🙂
