They say… “the way to the heart is through the stomach”! I happen to totally agree : )
(especially if it entails dark chocolate!)
Cooking for me is an expression of love. It’s the way I say, “I love you” to the people in my life… healthy balanced meals for my family because I love and care about them. Having a hard day?… then a plate of cookies will surely make it all better! (my friends secretly hate this about me!)
I love to cook AND I love to cook for the people I love so, for Valentines morning I thought of this cute and healthy Valentine French Toast to say, “I love you!”
Valentine French Toast
10 pieces of whole grain bread
3 eggs
1/2 C milk
1 tsp sugar
1/2 tsp cinnamon
1/4 tsp vanilla
1 C greek yogurt
heart shaped cookie cutter
In a mixing bowl combine all ingredients except bread, beat until combined. Lay bread out on a flat surface, place heart cookie cutter on 1 slice, press. Turn slice over and press the heart through the cutter. Repeat with remaining slices. Cooking spray a fry pan or griddle and warm over medium heat. When pans hot, dip both sides of bread in egg mixture. Place on griddle and cook 1-2 minutes per side. Serve with 1 Tbsp greek yogurt, a sprinkle of cinnamon/sugar, and strawberries. Serves 6
*Here’s another idea for the leftover cut out bread slices: Cook them as directed above, once it’s turned over crack an egg into the whole and cover with a lid. Bake for 2 minutes for an easy-over french dipped toast!!
