Today’s peanut butter bars are a family favorite that we’ve loved for decades–they’ve got peanut butter cookie base, a layer of chocolate, and then creamy smooth peanut butter frosting! Heaven.

How to make Spring Peanut Butter Bars Recipe

  • Preheat oven to 350 degrees.
  • Spray cookie sheet with cooking spray and set aside.
  • In a mixing bowl cream together butter and peanut butter then add eggs; mix well.
  • Add sugars; mix.
  • Add salt, baking soda, oatmeal, and flour; mix until incorporated.
  • Spread batter evenly into prepared 18×13 cookie sheet pan.
  • Bake 12-15 minutes or until lightly browned.
  • Remove from oven, let cool 2 minutes, and sprinkle chocolate chips on top.
  • Let chips melt and spread evenly over top, cool in fridge completely.
  • Then frost, garnish, cut, and serve.
  • Peanut Butter Frosting: Combine butter and peanut butter in mixing bowl, add vanilla; mix.
  • Add powdered sugar 1 cup at a time; mixing well with each addition until thick.
  • Add milk to smooth out frosting.

We crush up Cadbury Mini Eggs to garnish our bars however if you don’t have them on hand just used chopped chocolate or spring colored sprinkles would be adorable too!

Helpful baking tips for higher elevations: 

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

  • 1 cup butter, softened
  • 2/3 cup peanut butter
  • 2 eggs, room temperature
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 tablespoon baking soda
  • 2 cups oatmeal
  • 2 cups flour
  • 1 (10 ounce) package real milk chocolate chips
  • Frosting:
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 tablespoon vanilla
  • 3- 3 1/2 cups powdered sugar
  • 1 tablespoon milk
  • Garnish- crushed cadbury mini eggs or chocolate shavings
