- If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake.
- Adjustments are needed for 5000+ feet and above:
- Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
- Reduce sugar: for each cup, decrease 2 tablespoons.
- Increase liquid: for each cup, add 2 to 4 tablespoons.
- Increase oven temperature by 25 degrees F.
- Check if it is done a little early.
- This takes some trial and error to get it right for you.

Can you use bananas that were frozen?
I would not recommend it- frozen banana’s have much different texture and more moisture once they are thawed. If you try it- be sure to reduce the amount by 1/4-1/3 and increase the baking time and then let me know how it goes!! 🙂
YUM, YUM, YUM, made these for a church dinner, they FLEW off the plate!
Yay!!! That’s so awesome… we loved hearing what a hit they were! 🙂
I have made these cookies too many times to count! I take them to the office and share them with my co-workers and they are a big hit! The only thing I have changed is that I take the egg whites and whip them till they form stiff peaks, then fold them into the batter right before I add the flour. Adding the flour with a spoon and just blending until mixed. OMG! Thanks so much for sharing these delicious cookies!!
Hi Robin… that’s so awesome!! I’m so happy to hear that you and your co-workers love these cookies 🙂 Awesome idea on the egg whites too… thank you for sharing. Have a beautiful week. xoxo~ Ruthie
