Rocky Road Brownie Bites Recipe are a fun twist on my Grandma Louise’s brownie recipe…she’s the inspiration for our blog AND our whole family adores this recipe! I’m happy to share it with all of you. If you already have a go-to brownie recipe then I think you still outta give this one try! 🙂

Ingredients in Rocky Road Brownie Bites Recipe
- Cocoa Powder- is rich in theobromine, which helps to reduce inflammation and can protect you from diseases such as heart disease, cancer, and diabetes. Since cocoa is rich in phytonutrients but low in fat and sugar, the calories you get from cocoa powder will be packed with healthy chemicals.
- Chocolate chips- particularly dark varieties (70%+ cocoa), offer health benefits due to high antioxidant content, which can improve heart health, lower blood pressure, and boost mood. They also provide quick energy, contain minerals like magnesium and iron, and may aid cognitive function. Moderation is key due to sugar and fat.
- Butter- Butter is rich in nutrients and beneficial compounds like butyrate and conjugated linoleic acid. High-fat dairy products like butter have been linked to a reduced risk of obesity, diabetes, and heart problems. Still, butter is high in calories and saturated fat and should be enjoyed in moderation.
- Eggs- are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Egg yolks contain more calories and fat than the whites. They are a source of fat-soluble vitamins A, D, E and K and lecithin, the compound that enables emulsification in recipes such as hollandaise or mayonnaise.
- Granulated Sugar- Granulated sugar is also sometimes known as white sugar, or “regular” sugar. Granulated sugar has had all of the naturally present molasses refined out of it. The fine crystals in granulated sugar don’t cake together, which makes it perfect for measuring, sprinkling onto food and dissolving into drinks.
- Cashews- are nutrient-dense, offering heart-healthy monounsaturated fats, protein, fiber, and essential minerals like magnesium, copper, and zinc. Regular consumption may lower “bad” LDL cholesterol, support weight management by promoting satiety, improve blood sugar control, and boost immune function. They are also high in antioxidants that support eye health and reduce inflammation.
- Whole Wheat Flour- naturally has the level of fiber found in wheat, while most of the fiber has been removed from white flour during processing. Fiber is an important part of your diet, as it prevents constipation, helps control blood sugar, wards off heart disease, and even assists in weight-loss management.
- Marshmallows- are primarily a low-calorie, fat-free, and gluten-free treat, making them a safe indulgence for specific dietary needs, such as weight management or celiac disease. While they offer little nutritional value, they provide quick energy for athletes and can soothe throats due to their soft texture.
- Vanilla essence/extract- offers antioxidant and anti-inflammatory properties due to vanillin, which may help reduce cell damage and support heart health. Its aroma acts as a natural relaxant, helping to lower anxiety, improve mood, and aid in sleep. It also acts as a digestive aid and can treat skin issues like acne.
- Sea Salt- is mostly composed of sodium chloride, a compound that helps regulate fluid balance and blood pressure in the body. Since it’s minimally processed, it contains some minerals, including potassium, iron, and calcium.

How to make Rocky Road Brownie Bites Recipe
- Preheat oven to 350 degrees.
- Coat a mini muffin tin with cooking spray; set aside.
- In a small sauce pan add butter and melt.
- Whisk in cocoa powder until combined; set aside.
- In a mixing bowl beat eggs and sugar until light and fluffy; approximately 5 minutes.
- Add vanilla.
- Slowly drizzle in cocoa mixture and mix until combined.
- Add flour 1 cup at a time; mixing with each addition.
- Add sea salt.
- Using a mini cookie scoop drop dough into each mini muffin tin, press with spoon to level.
- Bake 8-10 minutes or until toothpick inserted in center removes clean.
- Allow to cool completely.
- In a small microwave safe dish melt chocolate for 30 seconds, stir, microwave 15 seconds more, stir until completely melted.
- Coat each brownie bite with a teaspoon of melted chocolate, pile on cashews and mini marshmallows, and then drizzle with additional chocolate.
- Allow to cool completely.
