Coconut White Chocolate Streusel Bars are thee BEST dessert bar in the whole world!

This recipe is a spin off of my Gram’s Chocolate Chip Squares recipe that I’ve loved all of my life!  Oh my.  Heavenly.

I love this recipe for several reasons- first I love my grandma and miss her dearly so when I make her recipes I’m reminded of the times we spent in her kitchen cooking together.  Next, I love that this recipe is simple to make and baked all in one pan- so much faster than baking batches and batches of cookies when you’re in a pinch for time.

Coconut, White Chocolate, Streusel Bars

Ingredients

• Streusel Topping:
• 1/2 cup butter
• 1 cup brown sugar
• 1 cup whole grain oats
• 2/3 cup flour
• 1/2 cup sweetened shredded coconut
• Coconut White Chocolate Bars:
• 2/3 cup butter, room temperature
• 3/4 cup granulated sugar
• 3/4 cup brown sugar
• 3 eggs, room temperature
• 1 tablespoon vanilla
• 1 teaspoon baking powder
• 2 cup flour
• 1 teaspoon sea salt
• 1 1/4 cup white chocolate chips
• 3/4 cup sweetened shredded coconut

Instructions

1. Preheat oven to 350 degrees F.
2. Coat 8x10 pan with cooking spray; set aside.
3. In a separate mixing bowl combine flour, baking powder, sea salt, and whisk to combine; set aside.
4. Streusel Topping:
5. Combine in medium mixing bowl; brown sugar, oats, flour, cut in butter with pastry cutter or two forks until peas size crumbles form.
6. Add coconut and mix to combine; set aside.
7. Coconut White Chocolate Bars:
8. Cream butter, add sugars, cream 2-3 minutes until light and fluffy.
9. Add eggs one at a time, mixing well and scraping with each addition.
10. Add vanilla; mix.
11. Add dry ingredients all at once; mixing until 80% incorporated.
12. Add chips and coconut; mix until just incorporated.
13. Evenly spread batter into prepared pan.
14. Sprinkle streusel topping on batter.
15. Bake 23-25 minutes or until golden and a toothpick insert in center removes clean.
16. Cool and Enjoy!

 

The coconut and white chocolate are a match made in heaven, naturally the streusel sprinkled on top makes it truly divine!   I know you’ll love this recipe.  All my neighbors and friends that got to have some of them completely raved on and on about them!
