I’m so excited to create a recipe for International Pancake Day plus THEN, throw a little Nutella® into the mix and watch the creativity fly!

International Pancake Tuesday is February 17, 2015 and there’s no better way to get the celebration started than with Homemade Blueberry Pancakes with Nutella®!

Don’t we all have fond memories of waking up to a lazy Sunday morning with the smell of Pancakes wafting from the kitchen?  I sure loved it when I was a kid and when I became a mom- I’ve loved giving those same moment to my three kiddos.

I adore Nutella®… love, love, love it!  Fluffy pancakes made with greek yogurt and blueberries mingled with that ahh-mazing flavor of Nutella® and it just does not get any sweeter!  Y’all will love the magic of these flavors together 🙂

I’m sure you’re all familiar with Nutella® but just in case here’s a couple of interesting tid-bits:

Nutella® (pronounced “new-tell-uh”) is a tasty, unique spread made from the combination of roasted hazelnuts, skim milk and a hint of cocoa. Nutella® has no artificial colors or preservatives.

Nutella® hazelnut spread does not contain peanuts or peanut ingredients. There is no risk of cross contamination with peanuts in the facility in which Nutella® is manufactured.

Nutella® hazelnut spread does not contain any ingredients derived from gluten-containing cereals: wheat, barley, rye, oats or triticale. There is also no risk of cross contamination with any gluten ingredients.

Nutella® hazelnut spread is kosher.

For Nutella® hazelnut spread sold in the U.S., the whey included in the product comes from milk, but animal rennet is not used to obtain the whey.

Since cocoa is an ingredient in Nutella® hazelnut spread, there is a trace of caffeine in a two tablespoon serving.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 2 cups unbleached all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt
  • 3 tablespoons sugar
  • 1 1/2 cups unsweetened coconut milk
  • 1 cups fat free greek yogurt
  • 2 eggs
  • 1 teaspoons vanilla
  • 1 cup fresh blueberries
  • 1 cup pure maple syrup, for serving
  • 1 cup fresh blueberries and raw sugar, to garnish
  • 1 cup Nutella®

Instructions

  1. In a large mixing bowl combine flour, baking powder, salt, sugar; mix to combine.
  2. In additional small mixing bowl combine coconut milk, greek yogurt, eggs, and vanilla; whisk to combine.
  3. Make a well in center of dry mixture, add wet; mix until just incorporated- do not over mix.
  4. (small lumps are expected)
  5. Coat griddle with cooking spray, place griddle over medium heat, once pan is hot add 1/3 C batter per pancake, when small bubbles appear flip to cook other side.
  6. Remove from heat and repeat for additional pancakes.
  7. Serve with Nutella®, pure maple syrup, fresh blueberries, and raw sugar to garnish.
  8. Enjoy!
