Mexican Cuisine is one of the most loved in the world. . . the traditional Mexican flavors combine savory and earthy flavors with condiments and spicy salsas served on the side for seasoning or textural contrast. 

Our Culinary Journey Around the World is heading over to Mexico for a little visit because Cinco de Mayo is going to be here soon and even though they don’t actually celebrate it in Mexico it’s a great time of year to share the beauty of this country and some fabulous recipes too!  

A few years ago I went with my daughter, Madi, for a visit to central Mexico for a couple of weeks to see and tour some cities and villages there.  We had a wonderful time and it was a really awesome experience being apart of the culture in some of the many aspects of life there.

The pictures above are of me and the kind woman who taught me to make corn tortillas. . . it’s not as easy as you’d think.  She makes them daily to sell from this store/kitchen in the front of their home.  

Mexican cooking doesn’t call for a wide variety of exotic ingredients- common fruits and vegetables, easy to find cuts of meats, and few seeds and spices is all you’ll really need.  But, do underestimate the skills of the Mexican kitchen- the transformation of these ingredients is always magic.

Black Bean and Sweet Corn Tostadas Recipe combines several of the Mexican kitchen staples of cilantro, jalapeno, red onion, red pepper flakes, and then of course black beans and sweet corn. . . on top of a bed of shredded green cabbage and then add the crispy crunch of the tostada! Arrrriba!!

Ingredients in Black Bean and Sweet Corn Tostadas Recipe

  • Yellow Corn- Because of the high fiber content, it can aid with digestion. Corn also provides our bodies with essential minerals such as zinc, magnesium, copper, iron and manganese. Corn is a good source of the antioxidants carotenoids, lutein and zeaxanthin, which promote eye health.
  • Limes- are a good source of magnesium and potassium, which promote heart health. Potassium can naturally lower blood pressure and improve blood circulation, which reduces your risk of a heart attack and stroke. Research is ongoing on lime compounds called limonins that may be able to reduce cholesterol levels.
  • Red Onion- is full of sulfur compounds that protect the body from ulcers and various cancers. They can also fight bacteria in the urinary tract. The most important of these compounds is called quercetin – an antioxidant compound that could provide protection against cancer, heart disease and allergies.
  • Jalapeños- are rich in vitamins A and C and potassium. They also have carotene — an antioxidant that may help fight damage to your cells – as well as folate, vitamin K, and B vitamins. Many of their health benefits come from a compound called capsaicin. That’s what makes the peppers spicy.
  • Cilantro- is a fragrant, antioxidant-rich herb that has many culinary uses and health benefits. It may help lower your blood sugar, fight infections, and promote heart, brain, skin, and digestive health. You can easily add coriander seeds or leaves — sometimes known as cilantro — to your diet.
  • Chilli powder– rich in capsaicin, offers significant health benefits, including boosting metabolism for weight loss, reducing inflammation, and improving heart health by lowering blood pressure. It acts as a natural pain reliever, aids digestion, strengthens immunity with vitamin C, and may help regulate blood sugar levels.
  • Sea Salt- is mostly composed of sodium chloride, a compound that helps regulate fluid balance and blood pressure in the body. Since it’s minimally processed, it contains some minerals, including potassium, iron, and calcium.
  • Red Pepper Flakes- help give relief from digestive issues, pain and inflammation, so sprinkle them over everything! One teaspoon only contains 6 calories, plus they are also rich in Vitamins A, C, B-6, E, magnesium, iron and potassium.
  • Cabbage- has 1 gram of fiber for every 10 calories. That helps fill you up, so you eat less. It also keeps you regular, and it could help lower your “bad” (LDL) cholesterol and control your blood sugar. Cabbage also has nutrients that keep the lining of your stomach and intestines strong.
  • Sour cream- provides small amounts of essential nutrients like calcium, phosphorus, and vitamin A, while acting as a rich source of fat that helps the body absorb vitamins A, D, E, and K. It contains probiotics, particularly when cultured, which can support immune function and digestion. It is best consumed in moderation due to high fat and calorie content.

How to make Black Bean and Sweet Corn Tostadas Recipe

  • Black Bean and Corn Mixture:
  • In a mixing bowl combine black beans, corn, lime juice, red onion, jalapeno, cilantro, chili powder, and sea salt; mix to combine and set aside.
  • To assemble:
  • Place tostadas on serving plates, divide cabbage on each, top with black bean and corn mixture, a dollop of sour cream, and cilantro to garnish.
  • Serve with salsa of choice and

Ingredients

  • 1 cup canned black beans, drained
  • 1 cup canned sweet corn, drained
  • 1 tablespoon fresh lime juice
  • 2-3 tablespoons red onion, small diced
  • 1 teaspoon jalapeno, minced
  • 1 tablespoon cilantro, finely chopped
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon sea salt
  • 1/8-1/4 teaspoon red pepper flakes
  • 3 cups thinly shredded green cabbage
  • 8 corn tostadas, pre-made
  • 1/4 cup light sour cream
  • cilantro to garnish
  • 1 cup salsa to serve

Instructions
