There’s something about a southern comfort food recipe that rings in all our hearts. . . wether or not we have southern roots! We all know that it’s going to be down-home-delicious and stick to those ribs! Southern Black Beans and Rice will keep you full and happy for long haul. The flavor is rich and full and you’ll be thrilled with the whole experience. We lived in Texas when my kiddos were little, in fact two of my kids are Texas born. We loved living there and really loved the people and hospitality of the south! Southern Black Beans and Rice Recipe reminds me of the years we spent enjoying it all.
Southern Black Beans and Rice Recipe is a fabulous way to get fiber!
Five reasons to eat more beans:
1- The fiber in beans helps you feel full faster and prevents overeating.
2- Beans are an excellent (and inexpensive) source of protein.

Now, I know that some times beans give people a bit of a negative (gas-sy) experience BUT, the more often you incorporate them into your diet the easier it becomes on your system and that negative soon becomes a non-issue!! (Also Beano really does work!) There are so many obvious benefits to eating more beans that it’s worth the process : )

Ingredients for Southern Black Beans and Rice Recipe:
- 1 small bag of black beans
- 1 C celery, chopped
- 1 green pepper, chopped
- 1 jalapeno pepper, diced
- 1 beef boullion
- 1 clove garlic, minced
- 1 onion, chopped
- 1 ham hock (4-5 slices bacon, cut small can work too)
- 1/2 tsp thyme
- 1/2 tsp oregano
- 2 tsp salt
- 2 quarts water
Instructions for making Southern Black Beans and Rice Recipe:
- Brown Rice to prepared according to package directions
- In a medium mixing bowl cover black beans with 3 inches of water.
- Let soak over night, then rinse.
- Add all ingredients in Crock Pot, cover, cook on high for 5 hours or until beans are soft.
- Remove ham hock, pull off meat, add back to crock. Serve over brown rice.
- Top with salsa, light sour cream, chives.

Southern Black Beans and Rice Recipe is one of those slow cooker recipes that you just keep coming back to. . . it's that good! Southern black beans get a lot of their flavor from the ham hock that slowly cooks all day long with it.
Ingredients
- 1 lb package dry black beans
- 2 cups celery, chopped
- 1 green pepper; de-seeded, small diced
- 1 jalapeno pepper; de-seeded, minced
- 2 beef boullion
- 1 teaspoon garlic, minced
- 1 onion, medium diced
- 1 ham hock
- 4-5 slices bacon, cut into 1/4 inch slices
- 1 teaspoon thyme
- 1 1/2 teaspoons oregano
- 2 teaspoons sea salt
- 1 teaspoon pepper
- 2 quarts hot water
- Brown Rice, prepared according to package directions
Instructions
- In a medium mixing bowl cover black beans with 3 inches of water.
- Let soak over night and rinse well in strainer.
- Pre-heat slow cooker on high and spray ceramic insert generously with cooking spray.
- Add all ingredients, cover, cook on high for 5 hours or until beans are soft.
- Remove ham hock, pull off meat, add back to slow cooker.
- Serve warm over brown rice.
- Top with salsa, light sour cream, chives.
