Apple Cinnamon Whole Wheat Cookies are a healthy snack that your kids will love! If your kids are anything like mine, they get very hungry during school! I loved to always have nutritious cookies like these on hand for them to take as snacks to school. Make a double batch and watch your children love them all gone!! Apple Cinnamon Whole Wheat Cookies are made with Whole Wheat Pastry Flour and we love it. It has the same texture as regular white flour with all the nutrition of whole wheat! 🙂 

A few helpful tips for baking at higher elevations: 

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

Nichole fitness tips & Apple Cinnamon Whole Wheat Cookies Recipe!

 The kids are back in school and I am moving forward with the hope that they will remain in school. I recognize that there is a good possibility they will be returning home for online school, but for now I am going to act as if they are remaining in school. This means that I am making goals and structuring my days with kids in school. 

I will be honest, I am still struggling a bit with the motivation part. There is a little voice in the back of my head whispering, “What’s the point of making goals, it will all down the drain once the kids are stuck home again.” and “Don’t go to the gym, sit in the quiet while you still can, while there is still moments of quiet.”

I will fight the whispers and get in some solid gym time while I can. 

This week are doing a Tabata workout. Quick refresher for those of you that haven’t done a lot of Tabata workouts. Tabata is all out for 20 seconds with 10 second recoveries. One round of Tabata is four minutes. That is 20 seconds on, 10 seconds rest, repeated eight times. Sometimes I will alternate between two different movements within each round, making it a little easier on the psyche. Today we are going to stick to the traditional style, meaning one movement per round.

We have five rounds of Tabata in today’s workout, in between rounds take a one minute break. Quality and speed go hand in hand today. Good luck!

Apple Cinnamon Whole Wheat Cookies

Apple Cinnamon Whole Wheat Cookies Recipe are a healthy autumn treat!

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 2 cups whole wheat pastry flour
  • 1 teaspoons sea salt
  • ½ teaspoons baking soda
  • 1 1/2 teaspoon cinnamon
  • 6 tablespoons coconut oil, softened
  • ¼ cup applesauce
  • ½ cup coconut sugar
  • ½ cup granulated sugar or sugar replacer
  • 2 eggs, room temperature
  • 1½ teaspoons vanilla
  • ½ cup mashed overripe banana, approx 1
  • 3/4 cup old fashioned rolled oats
  • 1 cup apple, small diced
  • 1 cup butterscotch chips
  • course sea salt to sprinkle on top

Instructions

  1. Preheat oven to 375 degrees.
  2. Coat baking sheet with cooking spray; set aside.
  3. In a small mixing bowl; combine dry ingredients.
  4. In a large mixing bowl; combine coconut oil and sugars; mix.
  5. Add applesauce and mix for 2 minutes, add eggs one at a time- mix with each addition.
  6. Add vanilla and mashed banana; mix well.
  7. Add dry ingredients; mix to 80% or just until combined.
  8. Hand stir in oats, apples, and chips.
  9. Using a large cookie scoop, drop onto prepared cookie sheet.
  10. Sprinkle with sea salt.
  11. Bake 10-12 minutes until edges are lightly golden and center is set.
  12. Cool on cooling racks.
  13. Enjoy!
