It’s starts off with power greens, avocado slices, cucumbers, tomatoes, snap peas, and then add salmon and a sprinkle of sesame seeds on top.

- dashi
- HonDashi Bonito Soup Stock
- rice vinegar
- naturally brewed soy sauce

Healthy benefits of Salmon Salad w/ Sweet Vinegar Dressing Recipe
- Salmon- Salmon is a flavorful, fatty fish that’s rich in heart-healthy omega-3 fatty acids, salmon is a low-calorie protein source that’s also low in saturated fat. The American Heart Association recommends eating at least two 3.5-ounce servings of fatty fish like salmon every week. Salmon is a good source of vitamin D, which is important for healthy bones. It’s also high in B Vitamins, good source of Potassium, loaded with Selenium, contains the Antioxidant Astaxanthin.
- Avocados- are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids. Although most of the calories in an avocado come from fat, don’t shy away!
- Cucumbers- good sources of fiber, particularly in the skin. They also provide potassium and magnesium. The AHA also recommend reducing sodium and increasing potassium intake to help prevent high blood pressure. The cucurbitacins in cucumber may also help prevent atheroslcerosis.
- Tomatoes- antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
- Snap Peas- are an excellent source of vitamin K, which plays an important role in keeping your skeletal system strong. Vitamin K helps process calcium and adds it to your bone cells. This can help prevent bone problems like osteoporosis and bone fractures.
- Salad Greens- contain Vitamin A, Vitamin C, beta-carotene, calcium, folate, fiber, and phytonutrients. Leafy vegetables are a good choice for a healthful diet
- Sea Salt- Sea Salt is mostly composed of sodium chloride, a compound that helps regulate fluid balance and blood pressure in the body. Since it’s minimally processed, it contains some minerals, including potassium, iron, and calcium.
- Sesame Seeds- are an excellent source of manganese and calcium, both of which help your bones grow healthy and strong. Calcium also plays a role in nerve signal transmission, muscle movement, blood vessel function, and hormone release.

Today's Salmon Salad w/ Sweet Vinegar Dressing Recipe is a powerhouse of fabulous nutrition!
Ingredients
- 2 cups mixed power greens
- 1/2 cup cherry tomatoes, thinly sliced lengthwise
- 1/4 cup snap peas, thinly sliced lengthwise
- 2 petite cucumbers, thinly sliced on the diagonal
- 1 avocado, thinly sliced lengthwise
- 2 fillets salmon, cooked
- 2 tablespoons sesame seeds
- Sweet Vinegar Dressing:
- 1/2 cup dashi, 1 cup warm water +1/2 teaspoon HonDashi Bonito Soup Stock
- 1/2 cup rice vinegar
- 2 tablespoons Eden's naturally brewed soy sauce
- 1 tablespoons sugar
Instructions
- Place 1 cup of greens on two serving plates.
- Arrange avocado, tomatoes, cucumbers, and snap peas on greens.
- Top each salad with one salmon fillet and 1 tablespoon sesame seeds.
- Sweet Vinegar Dressing:
- Whisk together dashi, rice vinegar, soy sauce, and sugar until sugar is dissolved.
- Serve with Salad.
