Actually, it’s his mother-in-laws recipe and he was very kind to give me permission to share it with you!

Ingredients Yucatán Shrimp Ceviche Recipe
- fresh shrimp
- limes
- serrano peppers
- cilantro leaves
- red onion
- cucumber
- “shrimp juice”
How to make Yucatán Shrimp Ceviche Recipe
- Bring a large pot of water to boil.
- Combine lime juice, serrano peppers, and cilantro leaves in blender; blend until smooth.
- Rinse shrimp under cold water.
- In batches; slowly swipe shrimp through boiling water with a large strainer spoon (approximately 15-20 seconds per batch).
- **reserve the bottom 2 inches of water the shrimp is cooked in**
- Place shrimp in large bowl and add blender mixture; stir to coat.
- Allow to marinate for 30-45 minutes or until the center of shrimp are fully cooked by the lime/pepper marinade; stir twice.
- Drain off marinade.
- To finish: add red onion, cucumber slices, and shrimp juice; stir to combine.
- Serve warm or place in fridge for 2+ hours to enjoy chilled.
- Enjoy with tortilla chips!

These photo’s pretty much say it all–The Paradisus Hotel truly felt like paradise! Our only decision was… the beach or the pool?! There’s simply nothing lacking when it comes to this 5 star all-inclusive hotel.
I’m telling the truth when I say–you simply must experience the beauty of this part of Mexico. Our Evolution 35 tour was the perfect combination of adventuring with a tour guide who’s wealth of knowledge was astounding! We felt completely safe and in good hands the entire time.
Combined with relaxing and enjoying our stay at the Paradisus Hotel–the atmosphere, amenities, and wide selection of dining options were definitely impressive!
Our room was very clean–modern decor with a splash of ocean feel to it. Welcome to paradise! Actually, I can. not. wait. to go back and do it all again.

Akumal to swim with Turtles & Evolution 35
It was really cool to swim with the giant ocean turtles! We swam with a certified guide who led us in the safe areas where the turtles eat the ocean grasses.
We couldn’t believe how big they were–the largest and oldest turtle we saw was 35 years old! Also, we saw a trumpet fish and learned a lot about turtle life.
Sac Actun Cenotes & Evolution 35
San Actun Cenotes is a cave of mysterious wonders–an experience to remember! Cenotes are an underwater cave system situated along the Caribbean coast of the Yucatán Peninsula with passages to the north and west of the city of Tulum.
The water is crystal blue and chilly because it’s a fresh water so we wore wetsuits and life jackets… it was stunning!
The caves are an underwater cave system popular for snorkeling & cave diving, plus wildlife viewing.
