While we were in Denver visiting Emily and Rob we went to Boulder, CO. I found the cutest spice shop there called “Penzys Spice” that had TONZ of recipes!! (Of course, I was in heaven) These Cracked Pepper Salmon and Roasted Green Bean recipes are from their Holiday 2011 magazine. What a fun town! The only other time I’d been there was to run the Boulder/Boulder 10K back in 2005. I didn’t get spend to much time there then but this time we went to Pearl Street! It’s an outdoors shopping district and they have all these great stores…a tea store, a kitchen store, and this spice store!! What else could you possibly need? (other than the Rocky Mountain Chocolate Factory?? Which they do!!)
I made Cracked Pepper Salmon and Roasted Green Bean recipes last night and we loved them!! The marinade gives the salmon a more subtle flavor… it soaks right in and just melts in your mouth! Roasting the green beans make them taste really rich and nutty! I’d LOVE to make just about the whole magazine… don’t be surprised if a few more pop up 🙂 I’ll include a few pics of from our visit to Pearl Street…
Cracked Pepper Salmon
Cracked Pepper Salmon
3-4 salmon filets
1/4 C pure maple syrup
1/2 C soy sauce
2 Tbsp freshly ground pepper
Combine maple syrup and soy sauce in a covered bowl or a zip-top bag. Add salmon and refrigerate over night.
Preheat oven to 400 degrees. Remove salmon from the marinade and place in baking dish. Drizzle 2 Tbls of marinade over the salmon, discard remaining. Grind pepper over the salmon (add as much as you prefer). Cover with foil, reduce heat to 350 degrees, and bake 15-20 minutes until pulls away flaky in the center of filet. Uncover the last 5 minutes if desired.
Roasted Green Beans
11/2 lbs whole french green beans, ends trimmed, rinse
2 Tbsp olive oil
1/2 tsp sea salt
1/4 tsp pepper
Preheat oven to 425 degrees. In a bowl, combine ingredients, toss. Spread evenly on a rimmed baking sheet. Roast, stir half way through. Bake 20 minutes until tender crisp.
*I baked the Green Beans first then covered them to keep warm while the Salmon baked
Ingredients
Pour maple syrup into a large ziplock baggie
add soy sauce and mix around
Add salmon and place in fridge over night to marinate (mine marinated almost 24 hours)
When ready to bake place salmon in a baking dish
Drizzle 2 Tablespoons of marinade over salmon
Crack Pepper on top (use as much as desired)
Cover with foil, Bake 350 degrees 15-20 minutes until pulls away flaky in the middle of filet
The green beans go a little something like this…
Ingredients (I halved my batch)
Add olive oil
Add salt and pepper
Toss
Spread in baking dish, bake 425 for 20 minutes
Stir half way thru baking
