This Lemon Honey Salad Dressing is so versatile it goes perfectly with whatever kind of salad you’ve got the fixings for… vegetables with greens or fruit with greens; it can top either type of salad perfectly!!  I also like to dip baby carrots into it for a snack, it’s SO yummy 🙂

Lemon Honey Salad Dressing was lovely with our fresh garden greens (gotta use all that spinach, check out How our garden grows) I topped it with sliced tomatoes, avocado, 2 Tbsp low-fat feta cheese, and olives!  Delicious!!

Lemon Honey Salad Dressing...

Ingredients

  • 2 lemons, squeezed
  • zest of 1 lemon
  • 1 C honey
  • 1/4 C olive oil
  • 3/4 tsp sea salt or to taste

Instructions

  1. Combine first 3 ingredients in blender, blend until combined. Carefully with blender running, drizzle in olive oil, once incorporated add salt, Serve!!
