The next recipe in our Culinary Journey Around the World is a simple to make side dish that’s similar to a quick pickled cucumber salad here in the states. There’s no wedges of iceberg lettuce with blue cheese dressing in Japan! Japanese salads are usually very light and refreshing and very easy to make. You can use this salad as an accompaniment to any meal~ try them on the side of your favorite dinner like roast beef or chicken!

The typical Japanese kitchen does not have an oven, usually just a stove top with two burners. Most of their cooking is done on the stove top but commonly they’ll have an electric rice cooker in addition.  Japanese cooking is fresh and seasonal~ it’s usually dictated by the season. Coastal cities have lots of saltwater fish, while mountain areas feature freshwater river fish. Most dishes have few ingredients so each ingredient has the opportunity to shine!

Lets have a little chat about Soy Sauce…they are NOT all equal. Sad to say some are just chemically processed and taste like it too. Look for a “naturally brewed” soy sauce like Eden or San-J brands (they are easy to find in your natural foods market) and you’ll soon discover how much better it tastes. Chinese soy sauces are usually saltier that Japanese so I don’t like them as much. But, either way go for naturally brewed for sure.

Ingredients in Japanese Cucumbers with Sweet Vinegar Dressing Recipe

  • Cucumbers- good sources of fiber, particularly in the skin. They also provide potassium and magnesium. The AHA also recommends reducing sodium and increasing potassium intake to help prevent high blood pressure. The cucurbitacins in cucumber may also help prevent atherosclerosis.
  • Sea Salt- is mostly composed of sodium chloride, a compound that helps regulate fluid balance and blood pressure in the body. Since it’s minimally processed, it contains some minerals, including potassium, iron, and calcium.
  • Dashi- is a Japanese broth high in umami and nutrients, offering significant health benefits, including supporting bone health, providing low-calorie hydration (~5 calories/cup), and promoting cardiovascular health by reducing the need for high-salt seasonings. Made primarily from seaweed and fish, it boosts immune system health and helps manage weight by providing a rich flavor that reduces cravings for fats and sugars.
  • Rice vinegar- offers significant health benefits, including improved digestion, blood sugar regulation for diabetics, lowered cholesterol, and high antioxidant intake. Its mild, low-calorie profile makes it a healthy, versatile alternative for marinades, dressings, and sanitizing foods, aiding in nutrient absorption.
  • Naturally brewed soy sauce- offers potential health benefits due to its complex, fermented nature, including antioxidant properties, improved digestion, and reduced allergy symptoms. It can also serve as a lower-sodium alternative to table salt, containing roughly 870mg of sodium per tablespoon versus nearly 7,000mg in table salt.
  • Granulated Sugar- Granulated sugar is also sometimes known as white sugar, or “regular” sugar. Granulated sugar has had all of the naturally present molasses refined out of it. The fine crystals in granulated sugar don’t cake together, which makes it perfect for measuring, sprinkling onto food and dissolving into drinks.
  • Sesame Seeds- are an excellent source of manganese and calcium, both of which help your bones grow healthy and strong. Calcium also plays a role in nerve signal transmission, muscle movement, blood vessel function, and hormone release.

Did you know that there is a fifth taste experience? I remember learning about this in culinary school but before that I hadn’t heard of the term. So, what is it? It’s call Umami. Western Science maintains that there are four basic taste sensations: sweet, sour, salty, and bitter and all of them have a corresponding taste receptors in different locations of the tongue.  

The Japanese include umami, which they define as as deliciousness or tastiness, as a fifth taste, with it’s own receptor on the tongue.  

It’s hard to describe but some say miso, with it’s rich, complex aromas and flavor, is high in the umami factor. So, now you’ve got to go make last weeks Miso Soup so you can experience it! Other examples are konbu, green tea, and parmesan cheese…they have the ability to enhance and heighten flavors, so they are often associated with the experience of umami.

How to make Japanese Cucumbers with Sweet Vinegar Dressing Recipe

  • Peel cucumber (leaving a few thin strips of peel), cut in half length wise and scoop out the seeds with a teaspoon.
  • Slice the cucumber into very thin slices and place in a shallow mixing bowl.
  • Sprinkle with salt, toss to coat, and let sit 15 minutes.
  • Drain well, place in clean paper towels and squeeze remaining liquid out with hands.
  • Place in mixing bowl.
  • Whisk together dashi, rice vinegar, soy sauce, and sugar until sugar is dissolved.
  • Pour half of the sauce over the cucumbers, toss to coat, allow to sit 2-3 minutes and then drain, squeeze dry again with paper towels.
  • Return to bowl, add remaining sauce, toss to coat, divide into small dishes and sprinkle with sesame seeds if desired.
