I make Chicken Pesto Packets in the summer when our zucchini is coming out our ears!! Isn’t it crazy how much zucchini one plant can produce? Sometimes, I can’t even give it away… Because of squash bug problems in the past, my husband grew 6 plants this year! Yes, 6 of them!! So, I’ve come up with some pretty yummy ways to spread all that zucchini around! My next couple of posts will be ideas for what to do when the neighbors start refusing to take it off your hands!
Chicken Pesto Packets
4-5 chicken breasts
Sea Salt and Pepper each breast
3 medium zucchini- 1/4 inch slices
5-6 roma tomatoes- 1/4 inch slices
1/2 C pest, 2 Tbls per packet
In a heavy weight large piece of foil, lay the chicken breast add salt and pepper, top with zucchini and tomatoes, and then pesto. Roll foil ends together to form packet. Grill on medium high heat for 20 minutes, turning after 10 minutes.

I’m always on the look out for fun ways to use zucchini and tomatoes this time of year. My sister, Louise, hooked me up with this Chicken Pesto Packets several years ago. My kids were too young to really appreciate it then but they love it now!

Ingredients
