Grilled Artichokes

The first time I had Grilled Artichokes was at a lovely establishment in Denver, CO.  They were so amazing, I immediately started to figure out how to duplicate them.  I think I’ve gotten pretty darn close… at any rate they are yummy!
My first attempt at making Grilled Artichokes,  I tried to grill them ONLY… wasn’t a success! They were rock hard in the middle and burned on the face!  Next, I tried to boil them and then take them to the grill, not much luck there either, they were too mushy.  So, I figured out this recipe that works!

Grilled Artichokes

2 Artichokes
1 fresh lemon
2 tsp Olive Oil (1/2 tsp per half)
1/4 tsp Garlic Powder
1/4 tsp Onion Salt
1/8 tsp Sea Salt
1/8 tsp Pepper
1/4 C water

Prep:
Wash. Pull off small bottom leaves. Cut off stems. Cut off top 1/4 of artichoke. Snip tips off the remaining petals.
Cut the artichokes in half, remove the fuzzy choke and small leaves with a spoon.
Place in a microwavable dish face up. Squeeze the lemon juice over artichokes, Drizzle with olive oil, sprinkle with remaining ingredients. Add 1/4 C water, Cover tightly with saran, Microwave for 8 min or till semi-softened.
Grill face down on med high for 10 minutes or till a petal near the center pulls out easily.

Garlic Dip

1 C plain yogurt
1 Tbls chopped parsley
1 Tbls chopped chives
2 tsp chili sauce
2 cloves garlic, minced
1/8 tsp pepper

Combine ingredients and blend well.  Refrigerate until ready to serve with grilled artichokes.

If you are dip lover then this is a good one!  We usually each them right off the grill but this dip is yummy.

Snip off the tips
Cut off the top 1/4
Cut in half
Scoop out the fur and small leaves
Add rest of ingredients, microwave covered 8 min
Grill face down 10 minutes
Grill with whatever meat you have in the freezer


Throw them on the grill with whatever meat you have in the freezer… Dinner is served!  Enjoy Grilled Artichokes any day of the year!!
