I’m thinking that Blackberry Ginger Lime Mules are the perfect beverage to share some with a gathering of friends.  I’m totally crushing on the Diet Coke cans and flavors. . . aren’t they super hip?! 

Ohhhh and this little cocktail can also be served as a mocktail (by omitting the alcohol) so, it’s perfect either way your family and friends prefer them. 🙂

Blackberry Ginger Lime Mules are made with a Ginger Lime Diet CokeⓇ and a simple syrup which is just a few flavorful ingredients and 3 minutes on the stove top.  YAY!!  I love it when simple + tasty come together in a recipe that looks ever so decadent!

Blackberry Ginger Lime Mules

Blackberry Ginger Lime Mules are a fabulous way celebrate St. Patties Day!  www.cookingwithruthie.com

Total Time 13 minutes

Ingredients

  • 2 12 oz cans Ginger Lime Diet CokeⓇ
  • 2 cups ice
  • 2 ounces vodka, omit for mocktail
  • fresh blackberries and lime wedges, for garnishing
  • wooden skewers
  • Blackberry Simple Syrup:
  • 1 cup water
  • 1 1/2 cups fresh blackberries, cut in half
  • 1 1/2 tablespoons fresh ginger, rough chopped
  • 3-4 tablespoon zero calorie sweetener, depending on desired sweetness
  • 1 tablespoon lime juice

Instructions

  1. Blackberry Simple Syrup:
  2. Combine ingredients in sauce pan over medium high heat, bring to simmer, and cook for 3 minutes.
  3. Remove from heat and allow to cool.
  4. To serve:
  5. In each copper mug add 1 cup ice, 1 ounce vodka, 2 tablespoons blackberry simple syrup, and fill remainder of mug to the rim with Ginger Lime Diet CokeⓇ.
  6. Add garnish of blackberry and lime wedge skewers.
  7. Enjoy!
