Chewy Ginger Cookies remind me of the good old days… baking with my mom and grandma in the kitchen. This Holiday Season has brought up all of the feelings– I feel sad that things are not what they used to be. I miss making cinnamon rolls, caramels, toffee, fudge, cookies, and more with my mom and/or grandma. I find myself missing those beautiful memories that we created together. I let myself feel that sadness for a moment and then it slowly fades away as I’m overcome with gratitude.
I am so grateful that I have such heartfelt memories and people that love me in my life. I feel happy and can not wait to create these memories one day, with my own kids. As I was baking last week, I day dreamed of little Carter sitting on a bar stool across from me, making his own mini version of what I was making. My grandma would always let us in on the fun. Kids were never excluded from baking or her kitchen, no matter how old you were.
I remember sitting across from my grandma, on my a bar stool, making my own mini loaf of bread, rolls, cinnamon rolls, chewy ginger cookies, or pies as she baked. I remember transitioning to the other side of the bar when I was old enough, and then helping her make the “real” bread, rolls, cinnamon rolls, cookies, or pies. My heart longs for my kids and grandkids to have these memories with me one day. I love the Holiday’s because it means creating and spending time with the people I love most. Memories are so priceless.

Chewy Ginger Cookies
- 2 cups sugar
- 1 1/2 cups butter
- 1/2 cup molasses
- 2 eggs
- 4 teaspoons baking soda
- 1 tablespoon ginger
- 1 teaspoon sea salt
- 2 teaspoons cinnamon
- 4 cups flour
- Roll balls in additional sugar (and nutmeg if desired). Bake 350 for 8 minutes. Slam pan on counter to flatten cookies.
