Here we are; one week into the new year. Are you bored with eating
healthy already?
I always start the new year with such optimism, and then after a week or
two of eating nothing but oatmeal for breakfast, salad for lunch, fish
and veggies for dinner, I’m bored and craving fries.
This year however,I have made it my mission to find new and interesting
ways to eat better. Take my morning oatmeal for instance. I love my
oatmeal. Every morning I make a bowl with bananas, almonds, and a bit of
cinnamon. It’s delicious and keeps me fueled all morning long. Some days
I just want something different. Those same ingredients {with a little
tweaking and and added egg white} make a great waffle {or pancake} as
well.

Ingredients
- 1 banana well mashed
- 1 egg white
- 1/4 cup of ground almonds
- 1/2 cup of rolled oats {I used Trader Joe's Gluten free}
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- combine everything together
- scoop 1/4 cup batter {makes 2} into waffle maker
- you could also use a griddle heated to 350 to make pancakes {cooking
I get a break from my oatmeal and can enjoy waffles without feeling guilty.
