Protein Eggs

 This is one of my running partners, Jack.  He and I have logged hundreds of miles together over the past 5 years…. he’s even done some 13 milers with me!  All I have to say is, “wanna go for a run?” and he’s pouncing all over the place with his tail a waggin’!!

 

I make these eggs, I call them protein eggs and my husband has nicknamed them… Prison Eggs!  (apparently because they’re light in color)  Jack and I have this deal… when we get home from a run, I make the eggs and he gets a yolk omelet out of the leftovers!  Perfect…. 30g of protein for me (hardly any fat or cholesterol) and a shiny coat for him (thanks to the yolks!)
Protein eggs and Whole Wheat toast (don’t you love that butter spray? I do with a little honey!)

Protein Eggs

4 egg whites
1 whole egg
Sea Salt and Pepper to taste

Spray non-stick pan, separate egg whites into bowl, add whole egg, beat with a fork.  Salt and pepper to taste. Cook over medium high, stirring till done.

5 eggs
1 whole and 4 egg whites
My eggs and Jacks yolks

These are good with your favorite salsa on top! Eggs are a relatively cheap form of protein… I buy them 5 dozen at a time. I didn’t realize the important roll that proteins play in the recovery process (after all I’m a true carb lover at heart!)….it’s crucial for rebuilding muscles. When I started running longer distances and doing some weight lifting, I learned that protein and a whole grain carb are a great combo for speedy muscle recovery!  I actually prefer these eggs to normal scrambled at this point.  Hope you all have a wonderful morning….

I saw on your blog that you are dealing with some pretty yucky stuff, I really hope that things are going ok.     Your puppy is simply adorable!!! I'll have to give the eggs a try that way. I am appreciating all of you recipes cause they look yummy but also I really enjoy the health tips you give! Please keep 'em coming! I am on medication that causes you to gain weight and I'm determined to fight it! I've gained 20 pounds since being on it and I just can't gain more! I told my husband about the book you suggested and we're going to get it! I LOVE your blog!!!
