Here is the perfect recipe for all your leftover turkey and cranberry sauce.
Instead of eating your leftover turkey the same way over and over again, switch things up with this light and refreshing salad.
If you don’t have any leftover turkey,don’t worry you can use a rotisserie chicken. Now you can enjoy this amazing salad year round.

Leftover Turkey and Cranberry Vinaigrette Salad

Ingredients
- 1 1/2 cups of leftover turkey, cubed (or rotisserie chicken)
- 8 cups of red leaf lettuce
- 1/2 cup of pecans halves
- 1 avocado, sliced
- 1/2 cup of feta cheese
- Cranberry Vinaigrette:
- 1/2 cup of cranberry sauce, I like to use my Cranberry Orange sauce
- 1/4 cup of balsamic vinegar
- 1/2 cup of half and half
- 1 tablespoon of granulated sugar
Instructions
- Salad:
- Place all of the above ingredients in a bowl and gently toss.
- Serve with Cranberry Vinaigrette drizzled on top.
- Cranberry Vinaigrette:
- Add all the ingredients into a food processor and blend until the sauce is smooth and creamy.
- Drizzle over salad. Store leftover dressing in the refrigerator.

What a delicious looking salad! And after all the food eaten at Thanksgiving, a light dish like a salad is a great way to use the turkey leftovers!!! Love it!
Serving turkey in new ways means it looks less like leftovers and more like a new creation. This salad sounds really good. I’ve got lots of turkey left over.
