Roasted Tomato Basil Soup is one of our very favorites!  This is actually one of the first recipes I posted when I began my blog BUT, the photo did not do this amazing recipe justice!  I simply had to update it and share it again with all of you.  Yep, it’s that good 🙂

AND the rolls in the photo are to die for… they’re called pretzel rolls and my sister got me addicted to them about a year ago!  They’re from Costco.

Roasted Tomato Basil Soup...

Prep Time 20 minutes
Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients

  • Roast Tomatoes:
  • 3 lbs ripe tomatoes- chopped
  • 2 Tbsp olive oil
  • 2 tsp sea salt
  • 1 ½ tsp black pepper
  • Saute:
  • 1 Tbsp olive oil
  • 1-2 onions, chopped
  • ¼ tsp red pepper flakes, or more if you like it spicy
  • Add and simmer:
  • 5 garlic cloves- minced
  • 4 C fresh basil leaves- thin sliced
  • 1 tsp thyme leaves or ¼ t dried thyme
  • 4 C water
  • 4 chicken bullion
  • 1 10 oz package Gnocchi

Instructions

  1. Roast Tomatoes:
  2. Heat oven 400 degrees.
  3. Toss tomatoes, 2 Tbsp olive oil, salt and pepper.
  4. Spread on baking sheet and roast for 45 min
  5. In a large stockpot; over medium heat sauté onions in the 1 T oil with red pepper flakes for 10 min or until browned.
  6. Add the remaining ingredients and bring to a boil.
  7. Simmer uncovered for 40 min.
  8. When the tomatoes are finished roasting, add to stock pot.
  9. Bring to boil and add gnocchi, when they float they are done!
  10. Enjoy.

Roasted Tomato Basil Soup… is just plain delicious!  I love that Gnocchi in there, something about that chewy-little-yumminess that I adore 🙂

Tomorrow WCw/R will be taking part in a really exciting event…  A Progressive Thanksgiving Dinner!  I’m super excited to be involved and it’s going to be full of especially awesome blogs and fabulous recipes 🙂

    Yum! This looks irresistable Ruthie! I wasn’t a big fan of tomato soup as a child but now I absolutely love it. Great idea to add the gnocchi to make a hearty meal. Oh, and I’ll be heading to Costco to find those rolls!
