Healthy & Nutritious Pecan Pumpkin Pie Oatmeal Recipe

Our Pecan Pumpkin Pie Oatmeal has some extra healthy nutrition tucked inside! It’s packed with omega 3’s, vitamins, and minerals found in the ground flaxseed and chia seeds.  Then, the healthy benefits of oats are so amazing because they help reduce bad cholesterol, have a fiber called beta-glucan, minerals, and oats contain manganese, selenium, phosphorus, fiber, magnesium, and zinc.

BUT, best of all it tastes AHhhh-mazing!

Ingredients in our Pecan Pumpkin Pie Oatmeal Recipe

  • Oats- I prefer to use whole grain oats because they hold up better that quick oats for baking. Did you know that oats in any form help to lower bad cholesterol, are rich in antioxidants, and a great source of fiber!
  • Flaxseed- is also a great source of lignans, which are a powerful antioxidant that helps your body maintain a healthy blood cholesterol level, high in Omega 3 Fatty Acids, high in dietary fiber, helps reduce blood pressure, and improves cholesterol.
  • Chia Seeds- Despite their small size, chia seeds are full of important nutrients. They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the “good” cholesterol that protects against heart attack and stroke.
  • Pumpkin Puree- I use canned pumpkin puree purchased at the grocery store, any variety will work just great. If you feel adventurous and want to make your own pumpkin puree (which fun but time consuming) then just be sure the consistency is similar to that of canned pumpkin puree. 
  • Pecans- are a Heart Healthy nuts contain monounsaturated fats such as oleic acid along with phenolic antioxidants which help reduce the risk of heart disease, improves digestion, helps with weight loss, anti-inflammatory benefits, immune boosting, and anti-aging benefits. 
  • Pumpkin Pie Spice- a wonderful way to get all the flavors of autumn!

Nichole with Fit Friday & our Pecan Pumpkin Pie Oatmeal Recipe

This week something fantastic happened for me, I had a great run. I had a run that I was able to push solidly through the whole time. I had a run that reminded me what running was like before stupid cancer and awful chemo treatments. I had a run that kept me smiling ALL day. The next day I was still happy, but I was also starving and so tired, and even that made me smile because it was a well earned tired and crazy appetite. 

Some solid speed work friends on the treadmill was a great way to get my run in this week. We cheer each other along, we push each other hard, and everyone gets to go to their hard without getting left behind. So this week I am sharing a speed workout for you to do with your friends. Remember that your base pace is a speed that you could maintain for an hour or more, that pace is what all of your work will be based on.
Grab some friends, good music, and get ready to have some fun!

Our Pecan Pumpkin Pie Oatmeal Recipe is packed with healthy ingredients to keep you fueled all morning!

Cook Time 3 minutes
Total Time 8 minutes

Ingredients

  • 1 cup whole oats
  • 2 cups hot water
  • 1/2 cup pumpkin
  • 2 tablespoons agave or Truvia Nectar
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seed
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • Toppings: 2 tablespoons raw pecans and drizzle agave or Truvia Nectar

Instructions

  1. In a large microwaveable bowl combine oats, water, pumpkin, agave or Truvia Nectar, chia seeds, flax seed, pumpkin pie spice, cinnamon, and vanilla.
  2. Stir to combine.
  3. Microwave on high for 2 minutes, stir and microwave 1 minute more or until desired doneness.
  4. Divide into serving bowls, top with pecans and drizzle of agave or Truvia Nectar.
  5. Enjoy!
