Toasted Cashew Vegetable Stir Fry is ready to go in just a few minutes… like about three is all!  Which is perfect for those busy days when you only have a couple of minutes to make a healthy and delicious meal!

I like having in my pantry- it’s cooked rice that is shelf stable, chewy and flavorful, and hot and ready to eat in just 60 seconds!  Or eat it straight from the cup for an on-the-go snack.  It’s completely portable without worrying about refrigeration and it’s already in a healthy portion size, which is always a nice bonus.

I love the nutty flavor of brown rice  is non-GMO and gluten-free too!  They’re are lots of different varieties that you’ll find at your local Kroger store… Brown Rice, Brown & Wild Rice and Multi-Grain Medley, all new Basmati Rice, Jasmine Rice, White Rice and flavorful mixes. There’s even a variety — Minute Ready to Serve Black Beans & Rice too!

Ingredients

  • 1 8.8 ounce package Minute® Ready to Serve Brown Rice
  • 1 12 ounce frozen asian stir fry vegetables
  • 3-4 tablespoons general tso stir fry sauce, adjust according to taste
  • 1/4 cup toasted cashews

Instructions

  1. Heat vegetables according to package directions.
  2. Coat vegetables with general tso sauce.
  3. Warm Minute® Ready to Serve Brown Rice and place on serving plate, top with prepped vegetables, and toasted cashews.
  4. Enjoy!

 

I love have to toast all varieties of nuts- I think it adds deeper nutty flavor that I love!  If your just need to toast off a few then I toss them in a hot, non-stick fry pan for about a minute.  Make sure to keep them moving so they get toasted on all sides and don’t burn.  If you’re doing a larger batch then put them on a baking sheet at 400 degrees stirring every about every 2 minutes until evenly browned.  Either way works great.
