Tomatoes are “on” in our garden! I guess I have a love/hate relationship with them… I love them fresh but I hate trying to figure out what to do with so many!! (And don’t forget the basil) I thought I’d start off my new blog with some our favorite Fresh Tomato recipes.

Most of my family loves tomatoes… my girls eat them whole like apples. When my oldest daughter was 3 yrs old she fell head first out of the shopping cart reaching for the tomatoes! WOW she ended up with quite a shiner! (and she liked to put on her own lipstick)

Tomato Bruschetta
1 baguette- thinly sliced, drizzle with olive oil, bake 425 degrees, 6 minutes or til toasted.
Combine:
4 tsp finely chopped fresh basil
1 ½ Tbls extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp salt
Top toasts with mixture
