I am so excited to visiting Ruthie today, and I am sharing one of my favorite fall snacks.

Halloween is over, and I could not wait to un-decorate. We had quite the selection of pumpkins on the porch this year; Stella may have gotten a bit carried away with her Halloween decorating.

That’s okay, it just means that I will have plenty of homemade pumpkin puree and roasted pumpkin seeds.

This year I made plain and cinnamon and sugar for the kiddos, but for the adults went SPICY.

Sriracha Roasted Pumpkin Seeds

Sriracha Roasted Pumpkin Seeds
Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 1 - 2 cups of pumpkin seeds {rinsed and dried}
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • Sriracha {a good squirt - but use as much or as little as you like}

Instructions

  1. Pre-heat the oven to 300 degrees
  2. combine the seeds, olive oil,salt, and Sriracha
  3. spread in an even layer on baking sheet
  4. roast for 40 - 45 minutes

I may have used a bit too much sriracha on ours 🙂 but that didn’t stop me from devouring them.
