Crockpot Magic Best Dinner EVER!

Today’s Crockpot Magic is the Best Dinner EVER with slow cooker shredded beef, mashed potatoes, and corn! Back in 2011 when CWR first began my son, Jake, named this recipe. Somehow it stuck over all these years–it’s a fun vintage post. It’s also a simple and hearty slow cooker beef recipe.

Why we love Crockpot Magic Best Dinner EVER

While we were eating this yummy little Crock-pot dish, I asked my family to think of a name for it…. they came back with all kinds of crazy ideas such as Crock-pot Surprise!
 
I, personally, think that sounded a little scary so I vetoed it and all the others things that came out of their mouths.
 
Here I am at square one again–trying to think of a name for this fabulous dinner. It’s kinda like a beef gravy and over mashed potatoes, my son said, “that was the best dinner evvver!!”  Maybe that should be the name… Best Dinner EVER!! ha, ha 🙂

Ingredients in Crockpot Magic Best Dinner EVER

• cream of mushroom soup
• onion soup mix
• petite sirloin

 

Step by Step for Crockpot Magic Best Dinner EVER

Mix soup, water, onion soup mix in Crock-pot
Brown meat and add to Crock-pot
Cook on low 6 hrs, shred with 2 forks

I leave the skins on my mashed potatoes… not because I’m a lazy little cook but because there are good nutrients in the skins! I also think they look kinda cool that way. Gram would’ve laughed to see them like that though!

I thought everyone probably knows how to make mashed potatoes but then this is a cooking blog so I figured I’d post it anyhow….

Gram use to put a pint of cream and a cube of butter in her mashed potatoes… no wonder they tasted amazing! But mine are just as good and a lot healthier 🙂

Crockpot Magic Best Dinner EVER!

Today's Crockpot Magic is the Best Dinner EVER with slow cooker shredded beef, mashed potatoes, and corn!

Prep Time 15 minutes
Cook Time 6 hours
Total Time 6 hours 15 minutes

Ingredients

  • 1 (15.2 ounce) can cream of mushroom soup (I like lowfat)
  • 1 cup water
  • 1 package of onion soup mix
  • 4-5 petite sirloin
  • Mashed Potatoes:
  • 6-8 large potatoes, medium diced
  • 1 teaspoon sea salt
  • 1/4-1/2 cup lowfat milk
  • 2 tablespoons butter
  • Salt and Pepper to taste

Instructions

  1. Coat a large fry pan with cooking spray to brown sirloin over medium high heat. 
  2. Combine soup, water, onion soup mix in slow cooker.
  3. Add browned sirloin.
  4. Cook on low 6 hours or high 3 hours 
  5. Before serving shred sirloin with 2 forks. 
  6. Serve over mashed potatoes or pasta noodles.
  7. Mashed Potatoes:
  8. In a large stock pot over medium high heat add potatoes and just enough water to cover the potatoes.
  9. Simmer uncovered until softened (about 15-20 minutes).
  10. Pour off water--leaving 1/2 cup remaining.
  11. Place pot in sink with a hand mixer blend the potatoes. (to reduce mess)
  12. Add milk, butter, salt, and pepper; mix to combine.
  13. Enjoy your Crockpot Magic is the Best Dinner EVER!
