Crockpot Magic Stroganoff

Sometimes life is just crazy. You never know what will come your way…. we all have different experiences but none of us are spared from the character building, tough to go through ones.  I was a single mom for several years and a college student which are super busy jobs but even then I wanted to feed my kids home cooked meals.  The Crock Pot became my best friend!  I began looking for super yummy recipes that were super easy.

I love dinners that you can throw in the Crock Pot in the morning and … wha-la at 6pm it’s pretty much all ready to go.  Now that I am remarried, some of my days are just as busy.  It’s nice to have some quick options for the hectic days.

Crock Pot Stroganoff

1 round steak cut into 1″ strips (I buy a double pack; cut in strips, use one and freeze one)
1 can of cream of mushroom soup
1 C water
2 beef bouillon cubes
1 C sour cream ( I use low fat)
3 C cooked noodles (I use whole grain angel hair) or brown rice

Combine soup, beef boullions, and water in slow cooker.  Add meat. Cook on high for 3 hours, low for 6 hours. Add sour cream 5 minutes before serving.  Serve over cooked noodles or rice.

First four ingredients
Mix together in the Crock Pot and let er’ cook
Add sour cream and cook noodles
Serve over noodles with a vegi or salad

I recently went to dinner with some of my single friends, they all wanted me to post Crockpot recipes so there will be more to follow.  If your a single parent with a limited amount of time or just need some “magic” recipes now and then this is a sure winner!!
