Clare’s Poppy Seed Salad… is absolutely fabulous!   Clare brought this delicious salad to our Bowling Christmas Party AND oh my word. It’s SO good!  I had to share it with all of you because you’ll love it just as much as I did…

Clare's Poppy Seed Salad...

Ingredients

  • Poppy Seed Dressing:
  • 1 1/4 cups sugar
  • 3/4 cup Regina red wine vinegar
  • Slowly beat in 1 1/2 cups vegetable oil
  • Add and blend:
  • 1 1/2 Tbs. poppy seeds
  • 1 tsp. salt
  • 3/4 tsp. dry mustard
  • 1/4 small purple onion
  • Amazing Salad:
  • Pick and choose and or all of the following ingredients:
  • baby spinach
  • romaine lettuce
  • regular lettuce
  • avocados
  • pineapple tidbits
  • mandarin oranges
  • fresh sliced mushrooms
  • dried cherries
  • dried cranberries
  • fresh sliced strawberries
  • blueberries
  • raspberries
  • crumbled Gorgonzola cheese
  • pomegranate seeds
  • crumbled bacon
  • finely sliced or chopped purple onions
  • candied pecans
  • toasted almonds

Instructions

  1. Salad:
  2. Chop the lettuce and romaine and layer it with the baby spinach and then sprinkle all the other ingredients on top.
  3. Raspberries, pomegranates and blueberries look pretty right on top. I like to make this salad on a large platter and peak it up as I add the ingredients.
  4. Dressing:
  5. Blend well and refrigerate after use. Shake well before each use as it will separate and settle.

Clare’s Poppy Seed Salad… this is a perfect salad any day of the year but especially fun to take along to a Holiday gathering!  It’s a crowd pleaser for sure 🙂  If you’re not making it for a crowd, it can easily be cut down for a small group too.
