Today’s Mexican pie with cornbread is made with jiffy cornbread, sharp cheddar cheese and three kinds of meat. You’ll love this cornbread pie…a southwest comfort food all baked up in one happy skillet!

Why we love Mexican Cornbread Pie Recipe
Our family loves this recipe, we first enjoyed it at my best friend Carol’s house one night when she invited us to dinner. It’s true it takes a village to raise a child—Carol and I have been a part of each others village for 15 years now. I’m so grateful for good friends like her!
Today’s Mexican Cornbread Pie Recipe has a lil’ bit of kick to it but don’t be afraid of the jalapeños…the corn bread calms them right down which is just plain delightful! (AND if you happen to like it spicy hot, just add in the jalapeño seeds to increase the hot factor.)

Ingredients in Mexican Cornbread Pie Recipe
- Eggs- are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. Egg yolks contain more calories and fat than the whites. They are a source of fat-soluble vitamins A, D, E and K and lecithin, the compound that enables emulsification in recipes such as hollandaise or mayonnaise.
- Cheese- is a great source of calcium, fat, and protein. It also contains high amounts of vitamins A and B-12, along with zinc, phosphorus, and riboflavin. Cheese made from the milk of 100 percent grass-fed animals is the highest in nutrients and also contains omega-3 fatty acids and vitamin K-2.
- Jalapeños- are rich in vitamins A and C and potassium. They also have carotene — an antioxidant that may help fight damage to your cells – as well as folate, vitamin K, and B vitamins. Many of their health benefits come from a compound called capsaicin. That’s what makes the peppers spicy.
- 90% Ground Beef- Ground beef is a good source of protein, providing 24 grams per serving. Beef is a great source of carnitine, zinc, selenium, iron, and B vitamins.
- Turkey- Rich in selenium, zinc, phosphorus and iron, turkey meat makes a useful inclusion to support thyroid function, immunity, bone health and energy production. The darker cuts of meat like the leg and thigh are richer in certain minerals, such as iron.
- Onions- Onions not only provide flavor, they also provide important nutrients and health-promoting phytochemicals. High in vitamin C, onions are a good source of dietary fiber, and folic acid. They also contain calcium, iron, and have a high protein quality (ratio of mg amino acid/gram protein).
- Yellow Corn- Because of the high fiber content, it can aid with digestion. Corn also provides our bodies with essential minerals such as zinc, magnesium, copper, iron and manganese. Corn is a good source of the antioxidants carotenoids, lutein and zeaxanthin, which promote eye health.

How to make Mexican Cornbread Pie Recipe
- Preheat oven to 425°.
- Coat with cooking spray a 9” skillet pan.
- Brown hamburger and sausage on medium high and drain.
- Sauté onions in meat, add peppers and bacon; set aside.
- In a mixing bowl combine jiffy muffin mix, eggs, milk, creamed corn, and garlic and chili powder.
- Stir to combine; do not over mix.
- Pour half of batter into prepared skillet.
- Spread meat mixture over batter.
- Sprinkle with cheese.
- Spread remaining batter over cheese.
- Bake 30 to 45 minutes or until lightly browned.
- Cool 5-10 minutes before cutting.
- Top with a dollop of sour cream and chives

Mexican Cornbread Pie Recipe is a delicious twist on the classic shephard's pie using jiffy cornbread plus I love one-dish dinners!
Ingredients
- 2 (8.5 ounce) Jiffy corn muffin mix boxes
- 2/3 cup milk
- 2 eggs
- 1 (16 ounce) can cream style corn
- 1 large onion, chopped
- 1/4 cup chopped jalapeño peppers, without the seeds
- 1 1/2 to 2 cups shredded sharp cheese
- 1/4 pound crumbled, cooked bacon
- 1/2 pound turkey/pork sausage, cooked, drained
- 1/2 pound ground beef, cooked, drained
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- sour cream and chives for garnish
