Fresh Homemade Italian Pasta Noodles Recipe are simple to make!
Not too long ago my daughter and her husband came over one Sunday and we made fresh Italian pasta with homemade tomato sauce. My son-in-law lived in Italy for a couple of years and he loves everything Italian… especially the food!
So, I’m really happy to share his Homemade Italian Pasta Noodle recipe with all of you. He learned to make this pasta recipe while living there. We had a wonderful afternoon spending time making fresh pasta noodles and then sharing a lovely traditional Italian meal around the table together.

Such a fun kitchen activity that includes the whole family! Let the little ones play with their own small amount of dough on the counter while the rest of the family rolls out, thinly slices, and cooks your fresh pasta.
If you’ve never had the pleasure of tasting homemade pasta, then you are in for a real treat! OMG. It’s amazing. You may never buy it at the store again!!
Really, it’s simply mouth-watering.
How to make Homemade Italian Pasta Noodles Recipe
• Homemade pasta can be adjusted according to how many people will be eating- the ratio is 3 1/2 ounces flour (100g) to 1 large egg.
• Have a rolling pin, knife or pasta cutter, and additional flour nearby to work with dough.
• Start with a clean work surface then mound the flour creating a large well in the center to place the eggs.
• Crack the eggs into the center and quickly pop the yolks with your fingers for ease in mixing.
• Start to mix the dough by bringing the outside edge of the flour into the center of the eggs.
• Work quickly in this same way by bringing the dough together before the eggs can run away!
• Knead for 4-5 minutes until smooth and elastic, set on freshly lightly floured surface, cover with plastic wrap and allow to rest for 30 minutes.
• Check for elasticity by poking the dough to see the indentation release.
• Divide dough into 4 pieces, working them one at time, and roll or use pasta machine to sheet pasta into 4×10 inches rectangular shapes.

• If you have a pasta sheeter it will make this process easier– we used an attachment for a kitchen aid mixer.
• Keep hands, dough, and counters lightly floured.
• Thinly slice with pasta cutter or knife, tossing with a small amount of flour, and piling in small nests to be cooked.
Pasta Cutter and Rolling Pin Homemade Italian Pasta Noodles Recipe
• Roll out the homemade pasta by hand using a rolling pin instead of using a pasta machine.
• Roll out the dough, and rotate it constantly: turn 90 degrees and then flip it it over.
• Be sure to keep your work surface, hands, and rolling pin are lightly floured– always!
• Continue this process until you have a pasta sheet of the desired thickness, about 1 millimeter or less.

Cooking our Homemade Italian Pasta Noodles Recipe
The key thing here, is to heavily salt your water! It adds essential flavor to your pasta but does not absorb too much. The ideal amount is 1 1/2 tablespoons per 3-4 quarts of water.
• Do NOT add oil to your water!! It does more harm than good. It can prevent the sauce from sticking to the pasta.
• Add water to your pot cold, adding the salt once it is almost to the boiling point.
• Wait for BIG bubbles before adding your pasta! The boiling temperature is what prevents the pasta from getting mushy. The first plunge into the boiling water is critical to the texture of the final product.
• Stir! Remember to stir to prevent sticking and uneven cooking.
• Do not use a lid on your pot, to prevent boiling over and to keep the pasta boiling evenly.
• For the tastiest way, you want to cook the pasta al dente, which means “to the tooth” or “to the bite.” Start testing your pasta 1-2 minutes before it’s supposed to be done.
• Drain quickly and serve immediately.
• The sooner you bring the pasta and sauce together… the better. Let the magic of the pasta and sauce marriage take place and make the perfect pasta meal!

In the ingredient list you have:
*8 ounces all-purpose flour (3.5 ounces or 100g per person)
*4 large eggs, room temperature (1 egg per person)
but you state in your recipe:
3 1/2 ounces flour to1 large egg
if we were to use the ratio given wouldn’t that be 14 ounces of flour for 4 eggs?
Also, wouldn’t you recommend using semolina flour for the pasta instead of all purpose flour for an authentic Italian pasta flavor?
