With summer winding down and Labor Day weekend upon us give this one a try! This salad is so refreshing and delicious, it just had to be blogged! Truly, you’ll be so happy you gave it a try! I heard the idea a few months ago from a friend of ours that lives in Denver. He had it at a restaurant and loved it so much he ordered another! To tell you the truth I’m not sure I remembered it completely right BUT, we have tonz of mint…. we even have minted grass! (Yes, as we mow the yard occasionally we get a refreshing wiff of mint, which is actually kinda nice!) So, I put this little mix together…. and it really tastes like summertime in a bowl! Enjoy 🙂
Summertime Watermelon Salad
6 cups Seedless watermelon- cut bite size
3 Tbls crumbled Feta Cheese (I use low fat)
2 Tbls Fresh Mint- finely sliced
Drain watermelon juice from bowl, add Feta, Mint. Stir and Serve
