Okay. It’s Knudsen time! R.W. Knudsen’s juice and company has been in my heart ever since I can remember… let’s start at the very beginning.
In 1996, when I was a little girl, we attended the Texas State Fair. Since our last name is Knudsen, naturally, we were pulled toward the R.W. Knudsen’s products. We bought a fridge magnet and ever since then, we have proudly had that “Knudsen” magnet on our fridge.
Every time I see that magnet on our fridge, I’m reminded of that night at the Texas State Fair, my wonderful family, and of course, how much we loooove all Knudsen products. They are simply the best.
Ingredients in Cherry Chocolate Yogurt Popsicles Recipe
- R.W. Knudsen’s Just Tart Cherry Organic Juice
- vanilla greek yogurt
- fresh cherries
- dark chocolate chunks
- freezer safe molds
- wooden popsicle sticks
How to make Cherry Chocolate Yogurt Popsicles Recipe
- Add 3 tablespoons R.W. Knudsen’s Just Tart Cherry Organic Juice to the bottom of each freezer safe container.
- Freezer for 30 minutes, add a popsicle stick to the center of each container and freeze another 30 minutes or until solid.
- Cover the top of each popsicle with vanilla greek yogurt, sprinkle with dark chocolate, and add a cherry on top.
- Freezer for 1 additional hour, remove from containers by running hot water on the exterior of each container.

Fit Friday with Nichole
We are enjoying these summer days to the fullest. I love the days that my kids wake up and head out the door as soon as possible just to run and play all day long with friends. It makes my heart happy to watch the mountain bikes going over dirt hills, scooters heading down sidewalks, and little boys with nerf guns using the neighborhood as a battle ground.
What I don’t love are the headaches that are complained about at the end of the night and the sunburns needing aloe. I have been reminded a lot these last few weeks by evening complaints that I need to be better about teaching my kids (and reminding myself) about having fun in the sun safely.
None of these items are a shock or a surprise, I sometimes just need to be reminded. And I have to remember it is worth the fight to keep the stupidity at a minimum.
Sure, the pink fluffy unicorn onesie is super cute, but she will have a heat stroke wearing that in July vs December.

- 1 cup fresh cherries
- 1/2 cup dark chocolate chunks
