Ingredients

  • 3/4 cup panko bread crumbs
  • 1 medium onion, chopped
  • 2 eggs, lightly beaten (or 1 whole egg, 2 egg whites to lower fat/cholesterol)
  • 1/3 cup fresh parsley, minced
  • 1 teaspoon pepper
  • 3/4 teaspoon sea salt
  • 2 pounds 90% lean ground beef
  • Gravy:
  • 1/2 cup all purpose flour
  • 2 3/4 cups 1% milk
  • 2 10 1/2 ounces condensed beef consomme, undiluted
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon pepper
  • 3/4 teaspoon sea salt
  • 1 package whole grain egg noodles

Instructions

  1. In a large bowl, combine first six ingredients.
  2. Add beef; mix until combined.
  3. Shape into 1 1/2 inch meatballs (about 36).
  4. In a large skillet, brown meatballs in batches.
  5. Using a slotted spoon remove to paper towels to drain.
  6. Gravy:
  7. Stir flour into drippings; cook until light brown.
  8. Gradually whisk in milk until smooth.
  9. Stir in consomme, worcestershire, pepper, and salt.
  10. Bring to boil; cook and stir for 2 minutes until thickened.
  11. Return meatballs to pan.
  12. Cook uncovered for 15-20 minutes longer or until meatballs are cook through, stirring occasionally.
  13. Meanwhile; cook noodles according to package directions.
  14. Serve over meatballs and gravy.
  15. Enjoy!
