Swish Meatballs are a hearty dinner that everyone always loves!

Ingredients
- 3/4 cup panko bread crumbs
- 1 medium onion, chopped
- 2 eggs, lightly beaten (or 1 whole egg, 2 egg whites to lower fat/cholesterol)
- 1/3 cup fresh parsley, minced
- 1 teaspoon pepper
- 3/4 teaspoon sea salt
- 2 pounds 90% lean ground beef
- Gravy:
- 1/2 cup all purpose flour
- 2 3/4 cups 1% milk
- 2 10 1/2 ounces condensed beef consomme, undiluted
- 1 tablespoon worcestershire sauce
- 1 teaspoon pepper
- 3/4 teaspoon sea salt
- 1 package whole grain egg noodles
Instructions
- In a large bowl, combine first six ingredients.
- Add beef; mix until combined.
- Shape into 1 1/2 inch meatballs (about 36).
- In a large skillet, brown meatballs in batches.
- Using a slotted spoon remove to paper towels to drain.
- Gravy:
- Stir flour into drippings; cook until light brown.
- Gradually whisk in milk until smooth.
- Stir in consomme, worcestershire, pepper, and salt.
- Bring to boil; cook and stir for 2 minutes until thickened.
- Return meatballs to pan.
- Cook uncovered for 15-20 minutes longer or until meatballs are cook through, stirring occasionally.
- Meanwhile; cook noodles according to package directions.
- Serve over meatballs and gravy.
- Enjoy!
